Head to DD Mau for a Two-Night Cambodian-Vietnamese Collaboration, Sept. 9-10th

Next week, on Tuesday, September 9th and Wednesday the 10th, DD Mau Chinatown is hosting chefs Chanthy Yen (soon to open Touk) and Tyler Hoang (DD Mau) for a two-night menu takeover.

Rooted in DD Mau co-owners Kim Tran and Kon Tran’s family traditions, and home-cooked meals passed down from Tra Vinh Province, DD Mau has always been about carrying those stories forward — and this collaboration builds on that spirit. Yen and Hoang are shaping a menu that travels between Cambodia and Vietnam, layered with personal touches from both participating chefs, and grounded in detail.

“We wanted to start this series with someone who cooks with heart and honesty — someone unafraid to tell their story through food,” says Kim Tran. “Chef Chanthy embodies all of that and more. It’s an honour to have him with us for our first one.”

It all kicks off with snacks. Think small plates that hit hard, including garlic-pickled cucumber with ikura and smoked salmon; braised beef tongue with Cambodian molé; and shrimp ktiss on fried eggplant chips. From there, appetizers raise the stakes: Chanthy is dropping East Coast scallops with crab roe and Kampot pepper foam; while Tyler is bringing a Lap Khmer salad with smoked beef tenderloin and lemongrass vinaigrette that nails those fresh-herb, toasted-rice, peppery notes you didn’t know you were missing. Mains keep the rhythm steady: Chanthy’s grilled duck with prahok, radish, sweet cabbage and herbs on one side; and Tyler’s tamarind canh chua cold noodle with glass noodles and market veg on the other. Dessert wraps it all up with banana-leaf dumplings filled with palm sugar, coconut and mung bean, and swimming in pandan condensed milk. And since food this bold definitely deserves a drink, cocktails come courtesy of Andrew Kong and Taylor Kare, of Bar Supernova.
