‘Vagabond’ is Popping Up at Nero Tondo for Five Nights Only

Sure, the world’s economy is in a freefall — but you’ve still got to eat. And if you’re going out, spend your money where it counts: on fresh, local food made by people who give a damn.

Vagabond, a pop-up built around travelling, collaboration, and local terroir, is rolling through town next week, taking over Nero Tondo space from Tuesday, April 15th until Saturday, April 19th.

Vagabond Chefs Christine Sandford and Roger Letourneau bring years of experience from kitchens across Europe and Canada. In Edmonton, Christine spent seven years leading Biera, while Roger headed up Bar Clementine. They’ve also cooked at Senderens in Paris, De Superette in Gent, Relae in Copenhagen, and Les 9 Caves in Banyuls-sur-Mer.

In 2021, Roger launched Lessig Ferments, a low-intervention fermentation company using local ingredients. Christine joined the team in 2023, and the two headed to southern France for R&D — digging into techniques and traditions from winemakers, vinegar producers, anchovy factories, and Catalan chefs. That trip sparked the first Vagabond pop-up, and they’ve been building from there ever since.

Now back in Canada, they’re continuing their journey — and the next stop is Vancouver. Details below:
