Do restaurants started by famous chefs from other countries who already have half a dozen other restaurants count as chains?
Perhaps you reach a level of quality that transcends the size of the company. If you’re good, it doesn’t matter how big or small you are. I think the public gets that, and holds the cookie cutter crap palaces guiltily in contempt. I’d be happy if David Hawksworth opened 10 successful restaurants under his own banner over the next 10 years.
