A Drinker’s Guide To Vancouver Hotels: The Royal Boulevardier At The Hotel Vancouver

The Fairmont Hotel Vancouver is a landmark, a genuine carrier of local history. The green roof-topped pile adorned with art deco details and guarded by gargoyles is among the most iconic sights in our city. Originally a Canadian Pacific Hotel, it has provided a pillow for the heads of dignitaries, politicians and world leaders since 1939.

Sadly, the building’s coolest asset isn’t even being used. Located on the 15th floor, the infamous 5,200 sqft. “Panorama Roof” was the Chambar of its day (1939-1983), an “it” spot where legendary big band leader Dal Richards – aka “The King of Swing” – got his start back in the Spring of 1940 (he was a regular performer there for 25 years). It was also where the city’s swish set raised elbows and got their Saturday night drunks on (for many years, the CBC used the dining room as a “happening” studio from which they broadcast national shows every week). Today, tipplers do their thing in the rather staid 900 West Lounge, which is located on the main floor.

The Drink | Fairmont Hotels has recently launched an international cocktail list of modern classics that are available at all of their hotels. The Hotel Vancouver’s contribution to the list was The Royal Boulevardier, a mix of Johnnie Walker, silky vermouth, Italian Aperol and real maple syrup — a civilized drink befitting the well-appointed space.
