Which one of your suppliers do you want to give a shout out to? Coastline Market. They are an e-commerce and logistics platform started by two young Vancouver based entrepreneurs, Robert Kirstiuk and Joseph Lee, connecting restaurants directly to fishers, harvesters, and producers across North America and Asia
What does this supplier supply you? Pacific Halibut, sourced from the months of March-November, caught sustainably from Ocean Wise bottom longline boats that fish near the Southern Haida Gwaii Islands. Once caught, each halibut is quickly gutted, headed, bled and iced to ensure boat-to-plate quality.
How is this ingredient currently featured on your menu? Pan Seared Pacific Halibut, Chili Braised Octopus, Charred Romanesco Broccoli, Preserved Lemon & Corn Emulsion with a Fennel Salad and Leek Oil (Market Price).
What makes this supplier so special? By essentially selling their seafood and shellfish even before the products are off the boats, they are able to eliminate the middleman. Therefore, the fishers make a better profit, their customers get better pricing compared to ordering from a wholesaler. and the quality is the freshest you can get.
