Bacchus Celebrates 35th Anniversary With New Fall/Winter Dishes and Ode to Classics

Vancouver, BC | Bacchus Restaurant, located inside Vancouver’s only Relais & Châteaux property Wedgewood Hotel & Spa (845 Hornby Street), celebrates 35 distinguished years with the launch of an anniversary tasting menu and a new fall/winter menu by executive chef Montgomery Lau.

“Bacchus is one of the city’s most enduring restaurants,” explains Elpie Marinakis, co-owner and managing director of Wedgewood Hotel & Spa. “The room has old world charm with contemporary touches – making it an escape from the every day, even just for a quick business lunch or drink in our lounge. For our 35th, we wanted to bring back our popular classics, as well as mark the changing seasons with new dishes by Chef Lau. We welcome all new and familiar faces to Bacchus.”

With the new menu, Chef Lau continues to feature dishes with Bacchus’s signature European flair using fresh, local, and regional ingredients where possible. The season calls for root vegetables and warm flavours.

Examples include: Lobster & Scallop Mousseline Terrine with sunchokes, roasted carrots, and poached celery; Hand Crafted Parsnip Agnolotti with brussel petals, heirloom carrots, and caramelized onion brodo; Slow Roasted half rack of Australian Lamb with poached gnudi, red cabbage puree, and roasted brussel sprouts; Butternut Squash Risotto with mascarpone toasted pumpkin seed, carrot top pesto, and parmesan tuile; and Hot Smoked Hon Shimeji Mushrooms with Vegetarian Lentil Cassoulet and chickpea fritters, roasted parsnip, fried cauliflower, and romesco sauce.

“As a Relais & Châteaux property, we are always looking to create that delicious journey for people when they visit Vancouver from around the world,” says Chef Lau. “We want them to experience both familiarity in a dish and delight at trying something new through our interpretation using local ingredients.”

The Bacchus 35th Anniversary tasting menu ($79 per person) is an homage to Bacchus classics. A three-course tasting menu, guests have the option of adding a wine pairing ($32 per person) as well.
