The winery has always focused on producing wines that showcase the truest expression of each vineyard’s terroir. This winemaking point of view allows each vineyard and region to shine through with its best qualities for Pinot Noir and Chardonnay in the most minimalistic way.

“In our farming practices and in the cellar, we always approach winemaking with a ‘less is more’ mentality. By picking at a lower brix than most other wineries (around 22 brix), we find the fruit to have optimum ripeness showing layers, plentiful flavour, complexity and retain a fresh palate,” say Copain Winemaker Ryan Zepaltas.” “In addition, we ensure minimal winemaking intervention by using low percentages of new oak barrels for aging, and we ferment the vast majority of our wines naturally without any added yeast. All of this helps us create distinct wines that truly showcase a sense of place, like Anderson Valley and the Sonoma Coast,” he added.

Copain’s Tous Ensemble range of wines are a perfect example of Zepaltas’ ability to make wines that are the truest expression of each vineyard site. French for “all together,” Tous Ensemble pays homage to the wines’ sourcing from the far reaches of the Sonoma Coast, showcasing consistent, approachable fruit characteristics that retain their acidity and food-friendly appeal.

“The cool, foggy reaches of the far Sonoma Coast and Anderson Valley excite me most,” says Zepaltas. “Our estate vineyards in these appellations are the perfect setting for getting slowly ripened, developing complex-flavoured grapes that we craft into powerful, yet elegantly styled wines that can age beautifully. Our style tends to have texture, tension, and a densely layered palate that fits best on the dinner table with friends and family.”
