Burdock & Co. Gives a Supplier Shout Out to Forager Alexander McNaughton

Scout works with a lot of local restaurants to get the word out about the cool and delicious things they’re doing, but they couldn’t do what they do without access to awesome ingredients. To get what they need, culinary creatives depend on personal networks of passionate artisans, farmers and producers who often work hard without ever seeing the glory they deserve. Since it’s always good to recognize those who have your back, we bring you the Supplier Shout Out!

For this edition of the Shout Out we pay a visit to Burdock & Co. to ask Chef Andrea Carlson about which ingredients she is excited to see come through the doors of her restaurant this week…

Which one of your suppliers do you want to draw attention to? Wild Food Forager, Alexander McNaughton.

Which ingredient from McNaughton are you currently most excited to use? Can’t choose just one (he always delivers an eclectic and inspiring haul of thoughtfully gathered treats). Our most recent delivery included lovage, comfrey, Nootka roses, pinecones, sea asparagus, and lichen.

How can we get a taste? This week we’re using some of Alexander’s ingredients in a tender ricotta, stinging nettle and lovage dumpling for Disco Dumpling Night (Mondays at Burdock).
