Spot Prawn Season Returns to Fairmont Pacific Rim

Vancouver, BC | As Vancouver’s celebrated Spot Prawn season returns, The Lobby Lounge and RawBar at Fairmont Pacific Rim has taken a twist on its popular Long board sushi experience and introduced a limited edition Spot Prawn Long board lunch. The special culinary experience is available Saturday and Sunday from 11:00am-2:00pm, for groups of two or more for $65.00 CAD per person (excluding tax and gratuity). The Long board lunch highlights a variety of spot prawn specialties and begins with an appetizer of Spot Prawn Miso soup and West Coast oysters, followed by a selection of 100% Ocean Wise BC Spot Prawn signatures like poached Spot Prawns, Nigiri, Aburi rolls, Oshizushi, Ceviche, and Poké. Accompanied by RawBar favourites like the Sable Motoyaki roll and Kampachi Tataki, it’s served on a sustainably crafted driftwood long board by Raven Timberworks in British Columbia. As well, a limited edition Fresh Sheet of BC Spot Prawn offerings is available daily at The RawBar during Spot Prawn season.

At Botanist, Chef Hector Laguna incorporates spot prawns into the ‘We’ll take it from Here’ menu, with hand-cut Chitarra pasta, Spot Prawn glaze, spring sprouts and topped with the sweetness of butter poached Spot Prawns. The six-course tasting menu experience is designed to be enjoyed by the entire table and features a series of ‘off-menu’ items, highlighting in-season ingredients, chef favourites and unique cooking techniques. Available nightly for $118.00 CDN per person, and reservations can be made online.
