Plant-Based Amaranthus Restaurant Opening Soon in New Westminster’s River Market

The Freebird Chicken space in New Westminster’s River Market (112-810 Quayside Drive) is on its way to becoming a new plant-based restaurant called Amaranthus.

The new 40-seat project is coming to us from Alejandro Diaz and Executive Chef Sam Fabbro, who opened the award-winning El Santo restaurant just a few blocks away in 2015.

Amaranthus is a vegetable forward, feel good restaurant built from the root up, for our beloved community. Our mission is to create honest food that highlights great ingredients in a welcoming space.

Though I haven’t set foot in River Market this month, their Instagram suggests they’re getting close to launch and they’ve just sent us an employment call out, which should be posted in Scout’s Opportunity Knocks page shortly. More soon.
