West Vancouver, BC | Ancora Waterfront Dining and Patio is expanding to West Vancouver’s Ambleside neighbourhood this fall and is currently seeking talented and passionate individuals to join our award-winning team. Located in the high-profile Grosvenor Ambleside development, Ancora’s new location will offer an innovative menu of Peruvian-meets-Japanese ‘Nikkei’ cuisine in an upscale environment featuring a 104-seat dining room, bar and waterfront patio.

Ancora is currently hiring the following front- and back-of-house roles for our soon-to-launch Ambleside location:

Line Cook

Working under the guidance of Executive Chef Ricardo Valverde, Line Cooks will be responsible for optimizing the cooking process with a strong focus on both quality and speed while enforcing strict health and hygiene standards. Experienced individuals should be able to use a variety of cooking methods, ingredients and equipment at a high level while also demonstrating a strong work ethic and a passion about food, flavours and learning their craft. All back-of-house team members must be able to multitask and take direction while working as part of a team in a high-pressure, high-performance kitchen. A culinary school diploma is considered an asset, but is not required.

Jr. Sous Chef

Ancora is seeking an enthusiastic professional cook with three to four years of experience in an upscale restaurant environment to join the kitchen team at our new Ambleside location. Our ideal Jr. Sous Chef is a dynamic, self-motived individual with strong communication skills who will be responsible for maintaining high standards of cleanliness and punctuality while fostering a cooperative and friendly environment within the back-of-house team. Most importantly, candidates should be driven to succeed and be passionate about food, flavours and learning their craft.

Assistant General Manager

Reporting to the General Manager, the Assistant General Manager will be responsible for ensuring excellent service and hospitality is provided to all guests, community members, vendors and investors.

Candidates must have leadership and interpersonal skills and should thrive in a busy, high-quality dining environment. Within this role, the AGM will build a high-performance team and continuously train, mentor and develop the service staff while holding all employees accountable to company standards and practices, evaluating and/or following disciplinary procedure when necessary.

Additional responsibilities include completing all assigned administrative requirements accurately and on time (updating menu and lineup notes, creation of floor plans, employee check-in and checkouts, beverage stocking); maintaining effective and timely communication with all FOH/BOH and HO team members; fostering a positive working relationship with kitchen leaders and line staff throughout service periods; ensuring knowledge of and adherence to all applicable laws, policies, procedures, HR practices and all internal procedures as they pertain to personal appearance, attendance and conduct.

Bar Manager

Ancora is on the hunt for a self-motivated and dynamic individual with at least two years’ management experience in a fine-dining atmosphere to launch the bar program at our new Ambleside location.

Candidates should possess both charisma and technical skill and demonstrate a comprehensive knowledge of beverage costing and inventory control procedure. Responsibilities include preparing weekly orders; hiring, supervising and training staff; designing and implementing the beverage menu; actively participating in the bartending community and representing the restaurant at industry events and in the media. The Bar Manager will report directly to the General Manager, but will be given room to exercise creative freedom and leadership.
