Botanist to Host ‘Michelin on the Road’ Collaboration with Acadia Chef Ryan McCaskey

Vancouver, BC | On Thursday, August 9, Botanist will host an exclusive Michelin on the Road culinary experience with internationally acclaimed Ryan McCaskey, executive chef and owner of Chicago’s Acadia, a Michelin Two-Star restaurant. The tasting menu will be available for dinner service only on Thursday, August 9 for $219.00 CDN per person including a cocktail and wine pairings (plus applicable taxes and gratuity). For one night only an inspiring culinary collaboration between Executive Chef Hector Laguna of Botanist and Chef-owner Ryan McCaskey of Acadia will design a coast-to-coast inspired seven-course tasting menu. Chef McCaskey will profile three contemporary dishes inspired by summer in coastal Maine, while Chef Laguna will design three original selections to reflect seasonal flavours of the Pacific Northwest.

Ryan McCaskey describes his style as simultaneously contemporary and classic. “It’s a blend of my early training which is rooted in classical cuisine and technique-driven fundamentals,” he explains. “And I’ve recently shifted to more to subtlety which layers flavors, and incorporates innovative techniques”.

In 2010, McCaskey began plans for Acadia, which was a lifelong dream, and opened the doors in 2011. His menu pays homage to the many summers spent in Maine and evokes the serenity and abundance found across the state in a harmonious balance of old and new. Since opening, Acadia has garnered accolades both nationally and internationally, including the coveted Two-Michelin stars, AAA Five-Diamond and James Beard Foundation nomination for Best Chef (Great Lakes, semi-finalist).
