Team at Kitsilano’s ‘Cacao’ Heads to Peru as Restaurant Undergoes Renovation

Vancouver, BC | Cacao is delighted to announce that our team is heading to Peru on a culinary adventure. As a progressive Latin restaurant, we believe it is important to immerse ourselves at the local level to ensure we stay cutting edge. Peru is known around the world for being a culinary epicentre in South America. Our chefs will be spending a week in central Peru learning the deep-rooted secrets of our dear friend and accomplished chef, Virgilio Martinez and exploring award winning restaurants, markets and local favourites.

While our culinary team is up to their elbows in Peruvian spices, our front of house and mixology teams will be touring the famous Pisco region. Pisco is named after the national beverage, a grape brandy made in this region. Those that have had our pisco sour know that it is one of the most authentic versions in town and easy to go down! Our team’s hunger to perfect and create Latin cocktails is a force to be reckoned with. Lead bartender Sergio Grandolfo draws his inspiration from his time in Tokyo, Milan and Vancouver and from his daily interactions with people. Everything he creates comes from the past but is adapted to encompass new techniques and methodology making every cocktail accessible to everybody. We are delighted to see what cocktail creations our team will unearth from Peru’s ancient past.

In addition to innovative new dishes and cocktail creations Cacao will be returning to a fresh look! Our space is undergoing an exciting renovation from our friends at BYU Design and Inform Interiors.

With this new look comes a new reservation system. We know that finding a table in Vancouver restaurants on short notice is growing increasingly more difficult as many restaurants are steering away from a reservation system due to a high volume of no shows. As a result, we are introducing tock reservation system. Limited to 20 seats, Tock will allow our team to take prepaid reservations. Our strategy behind the implementation of this system aims to reduce the number of no shows and ensure our loyal and new customers experience the best we can offer.
