The Arbor Launches New Resolution-Conscious Menu Additions for New Year

Vancouver, BC | The Arbor Restaurant has launched four new vegan menu items that aim to please us all. Want to warm your stomach and your soul? Try the new Winter Salad or The Arbor’s take on the classic French Cassoulet made with our own house sausage.

The Winter Salad is a hearty mix of roasted squash, beets, fennel and brussels sprouts on a bed of warm millet with herbed citrus vinaigrette, smoked onion cashew fraiche and candied walnuts.

The Cassoulet includes smoked Great Northern beans, root vegetables and cremini mushrooms topped with green apple gremolata and a house-made maple sausage. Both are hearty, warm, and chock-full of comfort… and did we already say it’s vegan?!

And for those of us who would rather close our eyes and wish the winter away we have our Potato Baba Pizza that is a direct transport to the Mediterranean. A unique assemblage of baba ganoush, smoked grape tomatoes, shaved new potatoes, roasted garlic, crispy capers, mint cashew sauce and chili oil on our own organic red fife crust.

For another nod to more balmy weather try our Tacos De Cauli Molida: ground cauliflower and walnut, charred tomato salsa, lettuce, guacamole, cashew cheese and cilantro. It’s a light and flavourful snack for sharing or a meal all to one’s self.

Those of us seeking to adhere to our resolutions will find an abundance of choice in the new menu additions at The Arbor without foregoing an ounce of flavor. So good you’d never know it’s healthy!
