VILLA EYRIE RESORT | Inspired by Lake Como, the Villa Eyrie Resort is carved into the mountainside of Vancouver Island’s Malahat Summit. Known for its elevated setting and soaring views of our wild West Coast, the resort overlooks the Sanich Inlet with eagles overhead and sea underfoot. The culinary team at Villa Eyrie has Ccreated up a seasonal menu full of foraged goodies for a private dining experience exclusive to our party.

THE SUMMIT RESTAURANT & CHEF INGHAM | Vancouver Island’s Summit Restaurant at Villa Eyrie Resort (600 Ebadora Lane, Malahat), recently named one of the top 30 new restaurants in Canada by enRoute, has a new executive chef running its kitchen team. Vancouver native Carmen Ingham was chef de cuisine since Summit’s inception. His cooking truly personifies his coastal British Columbia roots, while his Italian heritage complements Summit’s Tuscan-style.

Ingham was a Canadian finalist in the 2016 San Pellegrino Young Chef competition, and recognized as the “Le Creuset Rising Star” of the 2013 Hawksworth Young Chef Scholarship. He is a passionate supporter of the local food movement and believes in forging lasting relationships with nearby farms and wineries, as well as further expanding Summit’s own burgeoning garden.

CHEF BILL JONES & DEERHOLME FARM | Just up the coast, you can find the west coast oasis of Bill Jones’ Deerholme Farm. Deerholme Farm a culinary destination that offers workshops, cooking classes and dinners based on local and wild food. Bill is a French-trained chef who has worked in Michelin-starred restaurants in Europe and worked at top establishments in several parts of the world. Bill is also the author of 12 award winning cookbooks on a wide range of subjects, most recently the Deerholme Vegetable Cookbook. For the past 10 years, Bill has led classes in the forests and fields of the region. He is considered an expert in foraging and cooking with wild foods. The exclusive menu Chef Bill Jones has designed for our group will be served in an intimate dining experience on Deerholme Farm.

Edible Canada (formerly Edible British Columbia) is a six year-old business headquartered at Granville Island Public Market, in Vancouver, British Columbia. About Eric Pateman, President & Founder

Eric-@-Market-DinnerEdible British Columbia was created by Eric Pateman in the spring of 2005. Eric is a Vancouver native with a lifelong passion for food and wine. He has worked in the hospitality industry for over 15 years both as a chef and hotel consultant and has rated restaurants for the Mobil Travel Guide. Eric’s own culinary travels have taken him throughout North America, to the UK and to Africa where he has sought out unique food experiences. Edible British Columbia is the product of Eric’s fervor for great food and wine, his extensive knowledge of the hospitality industry and an enthusiasm for exceeding expectations when it comes to customer service. Eric is a past board member of the BC Culinary Tourism Society and the Vancouver Coast & Mountains Tourism Region. Eric is also a member of the Chef’s Table Society, Big Brothers of Greater Vancouver and supports many local charities including the Vancouver Food Bank and Les Dames D’Escoffier. Eric was named as one of Business in Vancouver’s Top 40 Under 40 Business People in 2007, and to Western Living Magazine’s list of the Top 40 Foodies Under 40 in Western Canada in 2008.
