Chef Chris Whittaker Joins Edible Canada To Celebrate Local Foraged Flavours

Vancouver, BC | On June 19, 2017, Chef Chris Whittaker of Forage Vancouver will be joining Edible Canada for the second event in their 2017 Canadian Table Dinner Series. The evening, titled Celebrate: Foraged, will offer up five courses devoted to regional and sustainable foraged ingredients, paired with wines from Mooncurser Vineyards and cocktails from Wayward Distillery. The evening will run from 7 p.m. until late and will be hosted in Edible Canada’s glass enclosed demo kitchen, where guests can interact with the chef first hand.

Chef Whittaker has made a name for himself in Vancouver by truly embodying his philosophies on sustainable cuisine. Whittaker’s philosophy is simple: respect our land and water. Use local suppliers: small farms and wild food. With this event, guests are invited to ‘taste the wild’.

“Foraging is an important part of Canadian cuisine but many Canadians wouldn’t know where to start” shares Edible Canada President, Eric Pateman. “Our goal with this dinner is to educate our guests about foraging locally while being able to taste and experience the products that result.”

ABOUT CHRIS WHITTAKER | Chef Whittaker is the force behind Forage, a celebration of sustainable dining in Vancouver’s West End. With his guidance, Forage has become the pioneer restaurant for responsible management through zero waste efforts, reduction of energy consumption and support of our local communities, from farmers to fishers, and everything in between.

The path to sustainability has been an easy one for Whittaker as conservation and the use of local products is how he lives. Bee-keeping at home, preserving fruit and vegetables to have a “canless” kitchen for Forage and working with small lot farmers throughout the year. An avid hunter and fisher-Whittaker is one of our city’s most interesting and passionate Chefs.

ABOUT THE CANADIAN TABLE DINNER SERIES | This dinner is the second in a series of six which span the course of the year. The 2015 series explored Canadian food from coast to coast with dinners to represent each province and the 2016 series showcased the cultures which have influenced our country’s culinary history. The 2017 Canadian Table series is a collaborative celebration of the ingredients and techniques at the heart of Canadian cuisine.

Held in Edible Canada’s newly renovated demonstration kitchen, the dinner series boasts exciting themes as well as an all-star line-up of chefs, BC wineries, special guests and local suppliers.

Edible Canada (formerly Edible British Columbia) is a six year-old business headquartered at Granville Island Public Market, in Vancouver, British Columbia. We are Canada’s largest culinary tourism and locavore retail company, dedicated to sourcing the highest quality culinary products from coast to coast for our customers.

About Eric Pateman, President & Founder

Eric-@-Market-DinnerEdible British Columbia was created by Eric Pateman in the spring of 2005. Eric is a Vancouver native with a lifelong passion for food and wine. He has worked in the hospitality industry for over 15 years both as a chef and hotel consultant and has rated restaurants for the Mobil Travel Guide. Eric’s own culinary travels have taken him throughout North America, to the UK and to Africa where he has sought out unique food experiences. Edible British Columbia is the product of Eric’s fervor for great food and wine, his extensive knowledge of the hospitality industry and an enthusiasm for exceeding expectations when it comes to customer service. Eric is a past board member of the BC Culinary Tourism Society and the Vancouver Coast & Mountains Tourism Region. Eric is also a member of the Chef’s Table Society, Big Brothers of Greater Vancouver and supports many local charities including the Vancouver Food Bank and Les Dames D’Escoffier. Eric was named as one of Business in Vancouver’s Top 40 Under 40 Business People in 2007, and to Western Living Magazine’s list of the Top 40 Foodies Under 40 in Western Canada in 2008.
