Chef Ricardo Valverde To Debut New Peruvian Tasting Menu For March At ‘Ancora’

Vancouver, BC | This March, step into Ancora Waterfront Dining and Patio where Lima-born Executive Chef Ricardo Valverde will honour his heritage with the debut of a vibrant Peruvian Tasting Menu offered for the entire month. The five-course set menu will showcase Chef Valverde’s takes on authentic plates while incorporating fresh and sustainable West Coast ingredients for a one-of-a-kind Vancouver dining experience. Each of the five courses will bring forward modern twists on Peruvian classics, including Papa a la Huancaina, Valverde’s contemporary version of a rustic potato dish; BC Trout Anticucho, local fish prepared in the style of a Peruvian street meat dish; warm winter ceviches and causas, and more.
