The GOODS from Forage & Timber

Vancouver, BC | Join us at Forage for a special dinner hosted by Gene Covert of Covert Farms Family Estate to launch a new Watershed Dinner Series at 6pm on Thursday, November 10th.

With this first dinner, Forage is launching a series of watershed dining events. A watershed is a collection of land, rivers and tributaries draining into a common source. In most cases on the Pacific Coast, these drain into the mighty Pacific Ocean. Getting to know these special places better helps us protect them. It helps us to know how to plan for a sustainable farming legacy in BC, for now, and for the future. These dinners will bring the best of food & wine from each unique watershed in BC.

We have recently divided up our wine list of wine growing regions in BC by watershed, and then by sub-regions of that watershed based on wine styles. On our wine list there are 4 major watersheds. The largest, the Columbia River Watershed is the backbone of the biggest wine growing region in BC, the Okanagan. Within the Okanagan we can notice differing styles of wine produced from grapes of regions within that large land area. Pretty loud voices of wines of place. We can explore them all in greater detail by bringing some of the farmers into Forage to help us discover them right here in Metro-Vancouver. Through the food and wine of those sub-regions we can understand the unique set of challenges they manage in their own backyards and celebrate their successes. There is a movement afoot to determine separate geographical designations for sub-regions of wine making areas in BC. This is the perfect time to explore this concept.

At the dinner, you can…

– enjoy delicious food & drink from Covert Farms Family Estate prepared by Chef Chris Whittaker and joined by other wines of the Southern Okanagan

– taste sold out wines including the 2012 Grand Reserve Cabernet Sauvignon that won our Chef Whittaker the Silver medal at Gold Medal Plates last November

– get the opportunity to taste a unique solera aged Cab-Zin Ambra (sherry-style wine) that’s not available for purchase

The cost for the dinner is $125 (plus fees) through Eventbrite.

About Forage

dscf1940

Forage stands for everything I care about. It represents what I was taught about food preparation both when I was growing up and over the course of my career in the kitchen. To me Forage means that we no longer seek out excess and indulgence, but instead revisit a time when we respected the land and oceans and took only what we needed to survive. It is about being stewards of our land and true conservationists, as we conduct our business and live our lives. It is about goodness, about taking care of each other, and bringing together our community over good food. Our philosophy is a way of life as much as a way of doing business. Saving energy, conserving water, composting and local/responsible purchasing policies all make a positive contribution to our world and our company’s bottom line. Casual, comfortable and affordable, Forage celebrates all things BC. The menu is locally focused in both food and beverage; service is attentive yet never fussy, and its approachable West End location (1300 Robson Street beside The Listel Hotel) makes Forage a local’s locale. It’s an ideal destination for breakfast 7 days a week, brunch on weekends and nightly for drinks and dinner from 4pm.
