by Andrew Morrison | Gastown eatery Cork & Fin closed after Valentine’s Day and is currently being renovated (I took a look inside today and found owner Francis Regio in the midst of ripping apart the stairs). The five year old restaurant at 221 Carrall St. is undergoing a complete reimagining of the brand and concept, which is to say that when it reopens it won’t be as Cork & Fin. And it won’t be an oyster bar, either. Instead, it will be a modern, two-level sushi bar, which is awesome news considering the neighbourhood’s sushi deficit in the wake of Sea Monstr’s closure (now Birds & The Beets). Oh I am shocked. I was their first regular – possibly their most regular regular. I have been away in LA since October so this is all news to me. I look forward to this new concept upon my return. I love sushi and yes Gastown needs a replacement for Monstr Sushi – I was a regular there as well. I know Francis will do an amazing job. Excited to see upon my return April 5.
