Vancouver, BC | Fairmont Pacific Rim’s Executive Chef Nathan Brown is pleased to welcome renowned Executive Chef Philippe Joannès, hailing from the prestigious Fairmont Monte Carlo in Monaco, to ORU from February 10-14, 2016.
For a limited time, these two top toques will come together to design an à la carte dinner menu that will take guests on a culinary journey; Chef Joannès and his signature Mediterranean flavours will marry together with ORU’s Pacific Northwest inspired cuisine, to create a unique dining experience of the senses.
The menu will feature a variety of ingredients of local origin, with Chef Joannès’ French techniques and traditions woven throughout.
The piece de résistance will be a 4-course masterpiece available the evening of February 14 for $99.00 CAD per person (excluding taxes and gratuities). Chef Joannès has crafted an exclusive menu for the occasion, with dishes such as Scallops with a pumpkin velouté, and Black Cod with roasted chorizo, octopus, and clams. A native of the Champagne region of France, Joannès was awarded Best French Craftsman 2000 (“Meilleur Ouvrier de France”), regarded as one of the most prestigious culinary awards of excellence in France. Discreet by nature, the Chef prefers to express himself in his plates instead of words. But when the subject is “Mediterranean flavours”, he is inexhaustible.
