“The Parker” Celebrates Spring’s Arrival With Fresh New Menu And Cocktails

Vancouver, BC | The Parker is excited to launch this year’s spring menu. With the freshest produce from local curated farms starting to show up, Chef Felix has delivered a beautiful selection of tempting spring fare sure to lure any palate.

Watermelon, jade, and icicle radishes are made gorgeous nestled in kalamata olive soil ($12). Grilled asparagus with spring garlic, mustard emulsion and a perfectly poached egg ($15) are a beautiful complement to incoming Rosé season. They can sneak into the five course Chef’s Choice Menu ($35) along with the first heirloom tomatoes of the year and some off-the-cuff creations using foraged ingredients and fresh offerings from local farms. Cattails anyone?

Don’t miss the new cocktails on the bar and patio: The Eternal Sunshine makes bold promises with vodka, fresh sorrel and aloe juice garnished with vermouth-charged grapes. The Laura Palmer (pisco, red wine, cinnamon, and cayenne) is just dark and twisted enough to ensure you never lose your edge while The Fresh Egg Mart, a solemn hat tip to our Chinatown neighbours, is a twist on the cult classic New York egg cream—chocolate syrup, Rye, Fernet, and a salty pretzel. What? Yes. Yum.

The Parker generates less than one pound of waste in a month and has become a sexy destination for the discerning diner. Two seats at the bar will deliver a ringside view of Felix Zhou delivering his innovative menu whilst Steve delivers dynamite cocktails and expounds on his wine program based on the Columbia Watershed Basin. Open for Dinner only, the little room seeks to accommodate all dietary restrictions with aplomb.

The Parker serves dinner Tuesday through Saturday from 5:30pm to 10:30pm, with drinks until midnight. Reservations are recommended and can be made via theparkervancouver.com or by calling 604 779 3804. Walk-ins are very much welcome.
