Vancouver, BC | Grab some bubbly, groove to the tunes and celebrate summer in style with Bubbles, Beats & Brunch at MARKET by Jean-Georges. On every Saturday and Sunday from 11:00am to 3:00pm, MARKET will be kicking it up a notch with an innovative brunch menu and champagne and cocktail specials. Brunch will be served along with live music featuring local favourite, DJ Chelsea Joelle and a guest saxophonist.
Chef de Cuisine Montgomery Lau will be introducing the restaurant’s new brunch menu inspired by Jean-Georges’ signature dishes with fresh, locally produced ingredients emphasizing comfort and creativity–including new flavour combinations that explore spices from other regions, all while remaining close to home. From Spicy Fried Chicken with Buttermilk Biscuits and Skillet Baked Eggs with Short Rib Hash and Crispy Kale, to a twist on traditional favourites such as Pandan Waffle Coconut Cream served with Caramelized Pineapple and Caramel sauce and Orange Flower Yogurt Sorbet with Hibiscus and Local Fruits, Bubbles, Beats & Brunch will sure to become a weekend highlight.
To complement the brunch menu will be a choice of champagne options including Louis Roederer and Chamdeville’s Brut Blanc de Blancs. For the creative types, guests can try their hand at making their own Russian standard Caesar from MARKET’s Caesar trolley where they will find crispy bacon, shrimp, Caesar beans, raw vegetables and much more. DJ Chelsea Joelle brings her deep passion and knowledge for all styles of music to MARKET ranging from top 40 and house to urban, remixes, disco/nu-disco, lounge and world beat. Since 2005, this Canadian-born talent has been spinning locally as well as internationally in Singapore, Malaysia, Thailand, Bali, Mexico, and the US. To add to her signature sound, Chelsea will be joined each week by rotating saxophonists Caley Honeywell and Karla Sax.

THE VANCOUVER SUN – Mia Stainsby | It’s been too long since I’ve visited New York… So it was really nice of New York to come and visit me. Market at Shangri-La in Vancouver borrowed chef Anthony Ricco from New York’s Spice Market to bring some of his food here. Both restaurants are operated by Jean-Georges Vongerichten, whose name is spoken in reverential tones even in that jaded city.
We shared four à la carte dishes, plus a dessert. Shaved tuna with chili tapioca, Asian pear and lime ($14) was, if I may speak in rhyme, sublime: Petals of sashimi-grade tuna and a quenelle of tuna broth sorbet were served over a coconut kaffir lime broth. Vietnamese chicken curry ($22) featured half a chicken chopped into eight pieces in a beautiful coconut curry broth; fresh cut herbs
rained down upon it…
Ricco says he was impressed by the passionate, hard-working crew at Market. By his reckoning, this generation of New York chefs are getting a little too soft.
In Vancouver, Market impressed me once again, with casual but impeccable service. Case in point: a server saw us switching dishes and swooped in with the proper cutlery for each of us. The congenial professionalism is just right.
