Vancouver, BC | On Friday, September 24, Canadian actor Dan Aykroyd will be behind the bar at YEW in the Four Seasons Hotel Vancouver to mix Crystal Head Vodka cocktails. Aykroyd, spokesperson for the brand, is making a stop at YEW on a “bottle-signing” tour of Western Canada and the US to share his passion for the designer spirit.

Crystal Head Vodka is quadruple-distilled and triple-filtered through Herkimer diamond crystals. It is manufactured by the government of Newfoundland, the last government owned still in all of North America. The vodka is sold in a clear glass bottle in the shape of a human skull. Read more

Know Your Local Designer: On A Cedar Log With Brent Comber…

Something spectacular happens where nature meets the urban, and Brent Comber knows all about that. Growing up on Vancouver’s North Shore, the designer’s childhood world was both city living and forest dwelling. Inspired by his surroundings, he began his career in landscaping, working with the raw materials that surrounded him. He acquired his knowledge of landscaping the same way he later acquired his woodworking skills: through his hands. Yet it was through his heart that his work began to transform. When Brent first introduced his work at an outdoor garden show in Vancouver, a woman approached his booth and sat on one of his benches. The woman closed her eyes and ran her hand across the smooth wood. When Brent approached her, she revealed that the fragrance of the cedar transported her back to her childhood, when she and her grandfather would spend hours walking on the the logs that had washed up on the shore. In that moment, Brent discovered the capacity of the wood to tell stories in its own rich and expressive language, and he resolved to continue to craft his pieces with a story in mind. From the 18 foot, one-piece communal table at Salt Tasting Room to the soaring western maple wall sculpture at Yew in the Four Seasons, his artistry can be found in many iconic Vancouver locations.

Three things about your neighbourhood that make you want to live there: My home is in the Hollyburn area of West Vancouver. I love being able to walk to the beach, to great restaurants and to my children’s schools.

When you finish a piece of furniture intended for a specific space, what do you hope to feel? I feel proud when our work compliments the designer’s vision and excited to see it in context.

What inspires your choice of wood for a given project? It really depends on the particular feel or story I wish to convey. Each wood species can engage people differently, depending on the texture and the finish. For example, our Shattered collection is about the physical energy and thought required to organize the split timber into cubes. It is about the process – the choice of material is secondary.

If wood can tell a story, which one of your pieces carries your favourite story? The Alder Cube. It’s an evocative piece constructed from very simple materials. It also conveys a beautiful story of how a forest can change you as you pass through it. People are fascinated to discover that the piece is constructed from vertical stacked branches and it appears that air is the only thing holding the sticks together. For a moment, you find yourself inside the cube trying to unravel this mystery much like your state of mind when you are in the deep woods. There are other stories hidden within each piece – it all depends on where you look. Read more

Yew And Four Seasons Gets A New Chef

With chef Raphael Gonzales gone to the USA I was wondering who would be taking over at Yew in the Four Seasons. It’s a German chef named Oliver Beckert, fresh from a Four Seasons property in Hawaii. Full press release below:

“Four Seasons Hotel Vancouver welcomes a new edition to Vancouver’s culinary scene with the arrival of Executive Chef Oliver Beckert. Landing in Vancouver from Four Seasons Resorts Lana’i in Hawaii, Chef Oliver Beckert will oversee all the Hotel’s culinary operations; from the city’s premier catering events to the gastronomic hotspot, YEW restaurant + bar. Beckert, whose accomplished skills began from a young age, was born, raised and educated in Nuremberg, Germany. As soon as his feet touched the ground, Chef Beckert found his calling. Learning the tricks of the trade since the young age of four, he has fond memories of cooking with his grandmother in the family kitchen.

Chef Beckert’s skills and creativity are a perfect fit for one of the world’s hottest dining destinations. He apprenticed at the exclusive one-Michelin star-rated restaurant “Bammes” prior to joining the venerable five-star Bellevue Palace in Berne, Switzerland – renowned for over a century of setting the standards in Swiss hospitality. Prior to his arrival in Vancouver, Chef Beckert honed his talents at Four Seasons Hotels and Resorts in Lana’i, Miami, Washington D.C., London and New York City.

“I have had the pleasure of working with Oliver while in Hawaii,” says general manager Simon Pettigrew. “He has such a passion for great food and with Vancouver’s dynamic restaurant scene we look forward to spicing up the city.” “I simply love to cook,” says Beckert. “I enjoy being an integral part of someone’s culinary experience, from taste, aroma, and texture to presentation, mood and environment…I thrive on the intensity of the creative challenge.”

Guests will be welcomed by a gorgeous new RAW bar, seafood-inspired menu, a few nips and tucks in the restaurant and brand new Executive Chef Ned Bell to anchor the shift. Bell brings his culinary philosophy of ‘Globally Inspired, Locally Created’ to the mix creating both classic and innovative plates.

The clean and focused menu features a variety of seafood, simply and expertly prepared.  Freshly shucked oysters are a natural start to the meal, paired with a glass of bubbles from a new selection of Grower’s Champagnes.  The ‘Day Boat Fish’ presents diners with the freshest ‘catch of the day’ and the new ‘Share the Fish’ platters will have all hands reaching across the table for Alaskan King Crab, Ahi tuna, scallop crudo, wild salmon and more.

YEW’s savvy sommeliers, Emily Walker and Adam Ashukian have done their homework and they, along with the new Vinotech machine, will offer guests a great selection of seafood-fabulous wines by the glass and bottle.  Both pros are up for any challenge!  Whether it be pairing wines for YEW’s new selection of ‘Turf & Fish’ dishes such as the unlikely, yet totally tasty, Pork + Octopus entrée.

Vancouver’s cocktail scene is exploding and YEW’s Bartender extraordinaire, Justin Taylor, is leading the pack. The elevated bar menu features original handcrafted, last century classics and house punches to ‘knock the socks off’ everyone sitting on a stool.

Fans of the restaurant’s much loved 16oz Rib Eye and Carbonara Gnocchi can rest easy – a few favourites will remain and those not feeling fishy can enjoy multiple beef, chicken and vegetarian options.  Dessert lovers are also in for a treat with Pastry Chef Bruno Feldeisen taking on rustic desserts featuring seasonal ingredients.

The restaurant’s new tagline, Modern. Coastal.
