Spaghetti Carbonara is a staple dish that a lot of restaurants and home cooks fuck up by going easy on the pepper, loading it with cream instead of egg and substituting bacon for guanciale. The new Campagnolo ROMA on East Hastings nails it.

DINER: “Campagnolo Roma” Nears End Of Construction With Aim To Open Next Week

by Andrew Morrison | I spent some of the morning taking a look at the almost-finished Campagnolo Roma restaurant. If all goes according to plan, they aim to be open at some point next week. We broke the news of its coming back in March:

Tom Doughty and chef Rob Belcham of Refuel and Campagnolo took possession of 2297 East Hastings this afternoon. The pair aim to open a new restaurant in its place called Campagnolo Roma. It will be based on the original Campagnolo concept and brand, only the fare will be more regionally specific to the Eternal City of Rome (expect a battery of flatbreads, real deal Amatricianas and Carbonaras, et cetera). The 35 seat space (plus another 8 on the patio) will replace the now defunct Caribbean Hot Pizza Express (no loss there) and is directly opposite Red Wagon. It will go under the reno knife immediately, and will open in May at the earliest. Ted Anderson (currently at Refuel) will be the opening chef.

Take a look at the menu here and here and the shots below. Lovely wooden paneling reminiscent of the original Campagnolo on Main, plus the green of Refuel. They also picked up the two cushy banquettes from DB Bistro and the sweet leather chairs from Lumiere. Looking good!

Vancouver, BC | Refuel Bar Manager Robert Scope introduces half pour wine pairings and an alcohol-free drink list. “We are starting to see a trend emerging; guests are requesting non-alcoholic mixed drinks and beer, as well as seeking out low alcohol wines,” says Scope. “I want our guests to have an incredible dining experience and not feel they have to abstain from enjoying a thoughtfully prepared beverage.” The new low and non-alcoholic options will appeal to designated drivers, guests with dietary restrictions and those who simply want to sample a variety of wines.

In addition to Robert’s new non-alcoholic drink list, guests can choose between a V.P.D. (Very Petit Drink) wine pairing and a Refuel wine pairing when ordering the daily $38, prix fixe menu. The V.P.D. pairing consists of a 2oz pour with the first two courses and a 1oz pour with dessert, for a total of five ounces, which is equivalent to one glass of wine. Field Trip #583: How To Confit A Pig’s Head With Robert Belcham

by Andrew Morrison | Refuel’s annual Whole Hog supper is on the immediate horizon (this Wed, Oct 27th), so I  popped in to the upstairs kitchen of sister restaurant Campagnolo yesterday to witness chef/co-owner Robert Belcham do the most vital work in his preparations. The task at hand was the main course for the nose-to-tail dinner. It sees a pig’s head centerpiece, from which many distinct nibblies are sourced. To supply the supper’s three seatings, Belcham needs to ready/confit 15 “heritage breed” Berkshire pig heads from Vancouver Island’s Sloping Hill farm, arguably the best pork supplier in the country.
