Our shop boasts a stunning room featuring classic chocolates, macarons, cakes and pastries: all items are hand-made daily using only premium ingredients. Barista crafted espresso and liquid chocolate are also a central part of the cafe, complemented by a selection savoury products such as sandwiches and soup. Vancouver, BC | On December 7th at 7:00 p.m., chef Thierry Busset will welcome chef Michel Roux chez Thierry to celebrate the launch of chef Roux’s most recent cookbook, ‘Desserts’. Although Michel Roux is best known for his exquisite Thames-side restaurant, The Waterside Inn, which recently celebrated 25 years of Michelin three-star status, his other true passion is dessert. Of course, the sweet courses are also the raison d’être for chef Busset, who worked alongside Roux at London’s iconic Le Gavroche. Finally made it over to Thierry, the new atelier/shop from Top Table and long-time CinCin dessert guru Thierry Busset. Outstanding coffee well pulled? Check. Well-heeled clientele accidentally spitting sugar into cell phones? Check. Perfect palmiers, sablés, cigarette tuiles, and all manner of baked goods that will blow you away? Quadruple check! Service was quick and without incident, and the patio was a people watching paradise. If you haven’t been, go.
by Andrew Morrison | Renowned chocolatier-pâtissier Thierry Busset and Top Table are on the verge of opening Thierry, the highly anticipated shop/atelier at 1059 Alberni. Local sweets and pastry fanatics have been waiting for this for well over a year now, so this is very welcome news indeed (we first reported on this back in April of 2010).
They will open the doors to public within the next few days. An official announcement will likely follow by the end of the week.
The design was done by Marc Bricault, the same fellow responsible for the stunning wine room at Blue Water Cafe and the recent makeovers of Araxi and CinCin. The tiny space features clean, modern lines and will sport both indoor and outdoor seating. “The shop will realize a longtime dream of mine,” Busset says. “Everything will be made on the premises and we will work in the style of the atelier, with our work space open to the retail area.” Everything will be hand-crafted every day using only the best ingredients.
If you’re not all that familiar with Busset, Gordon Ramsay called him “one of the finest pastry chefs in the world.” He toiled under famed chocolatier Bernard Sicard in Auvergne, at Pilati Patisserie in the Loire, and as pastry chef at London’s Le Gavroche and Marco Pierre White – both boasting three Michelin stars. In Vancouver, he wowed us first at West and has been flooring us since with his creations at CinCin for as long as I can remember. This man is a national treasure, so expect nothing less than the absolute best.

Vancouver, BC | Chocolatier-Pâtissier Thierry Busset is preparing to open his atelier in partnership with the Top Table Group later this year.
Under a bright awning that recalls the storefront pâtisseries of his native France–and simply reading thierry–the 220 square metre space will be dedicated to the creation of classic chocolates, pastries, cakes, and a variety of that Parisian icon: the macaron.
With the lease just signed and plans advancing rapidly for an Autumn 2010 opening, thierry will be located in Vancouver’s downtown core.
“The shop will realize a longtime dream of mine,” Busset says. “Everything will be made on the premises and we will work in the style of the atelier, with our work space open to the retail area.”
