Vancouver, BC | A partnership between Top Table Group (Araxi, Blue Water Cafe, CinCin and West) and Chef Pâtissier Thierry Busset (3-star-Michelin chocolatier-pâtissier who is widely regarded as one of the finest pastry chefs in North America), Thierry is seeking an experienced Sous Chef. Under a bright awning that recalls the storefront pâtisseries of Busset’s native France, the cafe and retail space present clean, modern lines, both indoor and outdoor self-seating, and is located on Alberni Street in Vancouver’s downtown core.
Featuring classic chocolates, pastries, cakes, and a variety of that Parisian icon: the macaron, all items are hand-made using only premium ingredients. Barista crafted coffees and liquid chocolate are also a central part of the cafe, complemented by a selection of savoury items and a liquor license.
We strive for the finest quality products and nothing else. One of these products is you! We are currently seeking an experienced Sous Chef. The ideal candidate must have a minimum of 7 years experience in professional pastry kitchens, including time spent in a retail pastry environment, and be well versed in inventory control, costing and purchasing.

Vancouver & Whistler, BC | Fresh on the heels of an unprecedented 17 awards garnered at the recent Vancouver Magazine Restaurant Awards, Top Table team members will be recognized with two more accolades.
On September 27th, executive chef Frank Pabst of Blue Water Cafe + Raw Bar, and restaurant director Brian Hopkins of West, will be inducted into the British Columbia Restaurant Hall of Fame. These awards signal those “who have demonstrated exceptional professionalism working in the restaurant industry by making their restaurant a special experience.”
The BC Restaurant Hall of Fame was founded six years ago by the BC Restaurant and Food Services Association, and annually honours “the greats” of the province’s culinary community. Jack Evrensel, proprietor of Top Table Group (and 2007 inductee) said, “This is a true distinction and a great honour for Frank and Brian, as well as being a real credit to the other team members in their respective restaurants.” Read more

Vancouver + Whistler, BC | Top Table restaurants were successful again this year at the annual Vancouver Playhouse International Wine Festival Wine List Awards. Convened on Friday, April 23rd at a luncheon to kick off the final weekend of the 32nd festival, Blue Water Cafe and West won two of only three Platinum Awards, while CinCin won one of five Gold Awards, and Araxi, Silver.
The Wine List Awards draw upon restaurants from across British Columbia and Alberta, with judging criteria measuring each restaurant’s wine program philosophy and how successfully wine and food pairing goals match it. Further criteria include the quality of wine education for staff, an accessible and user-friendly list, and the provision of value at all price points.
We would also like to congratulate Owen Knowlton, wine director of West, who was nominated for Sommelier of the Year, a distinction awarded to Blue Water Cafe’s Andrea Vescovi in 2009 and Chris Van Nus in 2007.

Vancouver, BC | Chocolatier-Pâtissier Thierry Busset is preparing to open his atelier in partnership with the Top Table Group later this year.
Under a bright awning that recalls the storefront pâtisseries of his native France–and simply reading thierry–the 220 square metre space will be dedicated to the creation of classic chocolates, pastries, cakes, and a variety of that Parisian icon: the macaron.
With the lease just signed and plans advancing rapidly for an Autumn 2010 opening, thierry will be located in Vancouver’s downtown core.
“The shop will realize a longtime dream of mine,” Busset says. “Everything will be made on the premises and we will work in the style of the atelier, with our work space open to the retail area.”
Marc Bricault, who has worked with Top Table on projects at CinCin and Araxi, and who designed the wine room at Blue Water Cafe, will be designing the space featuring clean, modern lines, and with both indoor and outdoor seating. Read more

Vancouver & Whistler, BC | Winning an Olympic medal is no easy feat. The road is long, the sacrifices many, and the support structures that enable athletes to reach the podium are elaborate. But ask an Olympic athlete the key to their success, and the reply is almost always, “My family and friends.”
Araxi in Whistler, and Blue Water Cafe, CinCin, and West in Vancouver, will salute winning athletes during the 2010 Vancouver Winter Olympics by helping them toast family and friends at the restaurants’ bars with a complimentary bottle of Nicolas Feuillatte champagne.

Sarah McCauley Appointed Wine Director At CinCin Ristorante

Vancouver, BC | Jack Evrensel, proprietor of Top Table Group, is delighted to announce Sarah McCauley as Wine Director of CinCin Ristorante. “Sarah has determinedly worked her way ever upward at Top Table restaurants, while continuously improving her professional wine credentials,” Evrensel said.
Beginning in 2002 as a server at sister restaurant West, Sarah took a leave overseas to work at London hotspot Zuma in Knightsbridge. She returned to Vancouver as a senior server and maitre’d at CinCin’s sister restaurant, Blue Water Cafe where her passion for guests’ experiences saw her play a strong leadership role.
This year, Sarah completed her Diploma and Certified Instructor designation (AIWS) from the Wine and Spirits Educational Trust (WSET). She has also attended Vin Italy for the last several years, renewing her wine connections in Tuscany and Piedmont, while constantly refining her knowledge of Italian wines, “the better to arrange the perfect marriage with CinCin’s menus,” as Evrensel says.
