On Tuesday, July 28, dinner at Cibo will feature Two Rivers Specialty Meats’ artisan, chemical free meats with optional handcrafted, additive free wine pairings from Farmstead Wines. The five course menu, highlighting Sloping Hills pork and Pemberton Meadows Beef, is just $50 with specially selected wine pairings for $25. Beginning in February, Cibo will give guests an opportunity to eat their way across Italy and learn about its diverse regional cuisines and wines with a series of monthly regional dinners. One evening a month, Cibo will offer a special 5-course regional tasting menu for $48, with optional wine pairings specific to the region.
The first dinner will be Wednesday, February 4, and will celebrate the cuisine of the Piemonte region. Piemonte is a landlocked, mountainous region of Northern Italy known for its substantial and hearty food – perfect for surviving the long winters (and perfect for Vancouver’s winter). Its landscape produces many amazing and high-quality ingredients, including wild mushrooms and truffles from the hills and forests, dairy and cattle from the fertile pastures, and rice and maize from the Po River Valley.
Cibo’s Piemonte menu will include:
- Fritto misto of sweetbreads, anchovy and sage, lemon
- Bagna cauda of fennel, baby beetroots, celery hearts, spinach and sunchokes
- Ravioli of potato, pancetta and sweet onions, red wine butter
- Braised Pemberton Meadows natural beef, black trompette mushrooms, soft polenta, horseradish gremolata
- Toma Piemontese, pistachios and honeycomb
