You may have noticed that blogs operated by restaurants tend to lean toward the irredeemably shitty because they’re either a) written by general managers or owners who can’t help but be shamelessly self-promotional, or b) they’re updated only once per epoch. The Dry Age, in contrast, is a breath of fresh air. The new tumblr is a joint effort from the kitchens of Campagnolo, Campagnolo Roma, and Refuel. It’s enjoyably frank (written in cheffish, staccato vernacular), honest, and unconcerned about the delicate sensibilities of customers who might be freaked out by an occasional swear word or a photo of a brain on a cutting board. From stories about collapsed drains at 4am to the deserved glorifying of some of local producers and their ingredients, it just doesn’t feel like a “company” website. Bonus: it’s updated often, which is to say it’s a solid bookmark. Check it out.

DINER: Tom Doughty And Robert Belcham To Open “Campagnolo Roma” On East Hastings

Tom Doughty and chef Rob Belcham of Refuel and Campagnolo took possession of 2297 East Hastings this afternoon. The pair aim to open a new restaurant in its place called Campagnolo Roma. It will be based on the original Campagnolo concept and brand, only the fare will be more regionally specific to the Eternal City of Rome (expect a battery of flatbreads, real deal Amatricianas and Carbonaras, et cetera). The 35 seat space (plus another 8 on the patio) will replace the now defunct Caribbean Hot Pizza Express (no loss there) and is directly opposite Red Wagon. It will go under the reno knife immediately, and will open in May at the earliest. Ted Anderson (currently at Refuel) will be the opening chef.

by Andrew Morrison | Robert Belcham, award-winning chef/co-owner of Fuel, Campagnolo and The Cure, has handshaked a deal with Sean Heather to oversee his multiple Gastown menus, including those at Salt Tasting Room, The Irish Heather, The Everything Cafe, Judas Goat and Fetch.
With the recent exit of chef Lee Humphries, there was a need to fill a hole at the top, not so much in day to day operations on the various lines, but rather in the realm of creative menu development (we’re happy to also report that Humphries has since landed as the new chef at “C”).
“We’ve been friends for a few years,” Belcham told me yesterday over a bottle at The Irish Heather. “I respect Sean as a businessman a lot. The guy spins gold out of shit”. He jokes, adding “I mean, who opens a fucking restaurant in Blood Alley with no chef?” Fair point. He seems to be stoked to be tasked with helping to re-craft a pub menu (“I’ve loved pubs since the day I was allowed to drink”), but I suspect it’s the prospect of fiddling with Judas Goat that excites him most. The new Blood Alley joint is basically an amuse bouche operation – churning out a kaleidoscope of tiny plates that are big on flavour – a prospect sure to give any creative mind the raging jollies. Paul Croteau Confections Now Available At Oakridge Mall…

A few years ago after enjoying a few courses at Fuel (now Refuel), I distinctly recall enjoying desserts made by a pastry chef I’d never heard of before. His name was Paul Croteau, and my wife and I fell in love with his creations straight away. He was also something of a character. “It’s funny,” I remember c0-owner Tom Doughty telling me that night, “when all the main courses are finished he sort of takes over, telling the kitchen to quiet down, saying ‘Shh…it’s my turn now’”.
A few months ago, after working for over a year with chef Jeremie Bastien at Gastown’s Boneta, Croteau returned to Refuel, where he is now in charge of desserts, as well as those at sister restaurant Campagnolo. Together with Doughty and chef Robert Belcham, he’s just opened Paul Croteau Confections, a retail kiosk in Oakridge Shopping Center, where you can find his assorted macaroons, cookies, candies and other assorted goodies.
