Join the crowd as the most exciting home-base bar competition of the season culminates with UVA bartenders Kenneth Rose, Ian Dayang, Tim Hoult, Lily Duong, and Arthur Wynne vying for bragging rights, an Apple iPad and a coveted spot competing on behalf of UVA in the BC Hospitality Foundation’s annual “Dish ‘n Dazzle” fundraising event on Thursday, May 1.

Developed by UVA bar manager Lauren Mote (Bittered Sling Extracts) and sponsored by Herradura Tequila and Brown-Forman Canada, the competition will see each bartender create a unique cocktail inspired by and using the featured spirit, Herradura Tequila. The most creative competition of the season culminates with six of Vancouver’s elite, behind-the-bar all-stars — Thor Paulson (Wildebeest), William Johnson (L’Abattoir), Julia Diakow (Cuchillo), Martin Correveau (La Pentola), Justin Anello (La Terrazza) and Sean McGuigan (Clough Club) — vying to become the winner of $1,000 cash, a limited bottle of Pere Magloire 20 YO Calvados and of course, coveted bragging rights.

Developed and sponsored by Pere Magloire Fine Calvados and our very own Lauren Mote, each bartender will be tasked to create a unique cocktail inspired by and using the featured spirit, Pere Magloire Fine Calvados. Guests will have the opportunity to sample each competitor’s cocktail and delicious inspired bites from the Uva kitchen.

This competition started on January 15th as an open call to working bartenders to submit a cocktail recipe showcasing one of the world’s most elegant and rare spirits, the apple-based “appellation d’origine contr?lée” (AOC) regulated brandy from the northern France, “Calvados”. All submitted recipes blind-tasted by Lauren and West Restaurant’s Bar Manager David Wolowidnyk to narrow down the group to the remaining six finalists. At Cibo Trattoria, Executive Chef Faizal Kassam and General Manager/Sommelier Steve Edwards will treat guests to a decadent, five-course gala menu. The first seating, which begins at 5 p.m., is $89 per person and features limited à la carte options as well as the exclusive New Year’s Eve menu with wine pairings also available. The second seating, which begins at 9 p.m., is $109 per person and features the festive NYE menu as well as a house-made aperitif upon arrival, party favours and Champagne toast when the clock strikes twelve.

Meanwhile, at adjacent Uva Wine Bar, revelers will be able to kick up their heels and partake in an unforgettably indulgent, New-Year’s-by-way-of-New-Orleans celebration complete with Mardi Gras beads, southern-inspired cocktails by Bar Manager Lauren Mote and passed midnight party treats for $40 per guest. Now it’s time to meet Uva by Day. The sophisticated wine bar is launching a new menu for Day, welcoming guests with artisanal sandwiches, traditional Italian brodos and bracing hits of rich, velvety espresso. Inspired by classic Italian cafes, Uva will be serving up Milan-meets-Vancouver cuisine. Think sandwiches wrapped in butcher paper — Braised Pork Shoulder spiked with apple bacon jam and salsa verde; Confit Chicken & Prosciutto with grilled radicchio, fig marmalade and Grana Padano; or Vegetale with grilled zucchini, eggplant, roasted garlic aioli, olives and goat cheese — traditional Italian Brodo made just the way Nonna would and Zeppole, hot Italian fritters filled with delicious seasonal flavours.

Mote will kick off her tenure by crafting a new lineup of custom cocktails beginning in October.

Mote, who boasts more than 13 years of expertise in leading bars and restaurants both in Toronto and on the west coast is perhaps best known to cocktail and culinary aficionados as co-proprietor of the wildly successful Bittered Sling, a retail line of high-quality, small-batch bitters and extracts. The new position not only allows Mote to renew acquaintances and reconnect with her well-established roots in the bartending fraternity, but provides her with a brick-and-mortar test bar in which to introduce patrons to Uva’s deep well of rare and distinctive spirits, while also incorporating the versatile roster of Bittered Sling Extracts.

“I’m excited to lead a world-class cocktail program and bar team in the heart of downtown Vancouver,” says Mote. “It’s something that I’ve definitely been missing since focusing my energies on Bittered Sling two years ago and now that our line is fully up-and-running, it’s the ideal time to return to my roots.”

Mote joins an already powerhouse team in place at Cibo and Uva. Edwards, one of the city’s leading wine stewards, is the former restaurant director and sommelier at acclaimed eateries such as Vancouver’s CinCin Ristorante and Whistler’s Araxi and Bearfoot Bistro. Executive chef Faizal Kassam, meanwhile, is a rising culinary tour-de-force whose 11-plus years in the Vancouver restaurant industry includes stints at Bin 941, La Brasserie, Bacchus at the Wedgewood Hotel and Hawksworth Restaurant at Hotel Georgia.
