Vancouver, BC | A true all-star line up of Canada’s most revered chefs will assemble to judge the second annual Hawksworth Young Chef Scholarship competition in Vancouver this month. When judging duties are over, the celebrity chefs will join forces in the kitchen to cook a special six-course fundraising dinner at Hawksworth Restaurant on the evening of Sunday September 28th.

During the day, the stellar line up of judges will be keeping an eye on the eight young chefs, selected from the Western and Eastern heats. Competitors will have three hours to create dishes with ingredients from the Freybe Mystery Black Box at the Pacific Institute of Culinary Arts. Those who have reached the final round of the Hawksworth Young Chef Scholarship, stand to win a $10,000 prize, presented by the Chefs’ Table Society of BC, and a stage at a top international restaurant.

Chef David Hawksworth will be cooking at the gala dinner with his fellow judges, each of whom has created a special dish for the six-course meal. Chef Hawksworth will be joined in the kitchen by his Chef de Cuisine Kristian Eligh and Vancouver-based Chef Michel Jacob from Le Crocodile, as well as Burnaby’s Chef Scott Jaeger from The Pear Tree for this year’s event. Other special guest chefs travelling west for the fundraising dinner include the legendary Chef Normand Laprise, owner and head chef of Toqué! and Brasserie T!; and Corporate Executive Chef of Oliver & Bonacini Restaurants Chef Anthony Walsh.

“Our country’s venerable culinary stars have stepped forward to take part in judging Canada’s Hawksworth Young Chef Scholarship this year,” says Chef David Hawksworth. “We’re excited to inspire the next generation of chefs and give people an opportunity to experience the cuisine of many great culinary masters during this extremely special gala dinner.”

The fundraising dinner will be served in Hawksworth Restaurant from 5pm on September 28, 2014. Vancouver, BC | Celebrated chefs from across Canada are hosting four multicourse collaborative dinners to support the Hawksworth Young Chef Scholarship.

After a successful inaugural event in 2013, the Hawksworth Young Chef Scholarship is expanding nationally with three regional heats for 2014; in the search for a young Canadian Red Seal chef who can wow the judges and take home the $10,000 prize, presented by the Chef’s Table Society of BC.

The competition kicks off with the Western Heat taking place at Calgary’s SAIT on June 22. Justin Leboe and David Hawksworth will be showcasing the best of western Canadian cuisine that evening at Model Milk, tickets cost $135 with wine pairings and can be reserved by calling 403.265.7343.

Next up is the Central Heat at Toronto’s Georgia Brown College. Oliver & Bonacini’s Corporate Executive Chef Anthony Walsh will be cooking with Chef Hawksworth at Luma on June 24. This collaborative dinner is $90 and can be booked through Luma at 647.288.4715.

Finishing up the first round of competition is the Atlantic Heat. Celebrated restaurant Raymond’s, and head chef Jeremy Charles, host in St. John’s, Newfoundland on June 27. The coinciding competition takes place on the 29th in Kentville, NS at the Nova Scotia Community College. Reservations are being taken at 709.579.5800: tickets are $125.

After the final round of competition and the awarding of the second scholarship recipient on September 28, all of the final judges will again be serving an amazing meal at Hawksworth Restaurant to toast another successful year. AWESOME THING WE ATE #917 | Is The Best Burger In Vancouver At Hawksworth?

by Andrew Morrison | Oh, it’s very close. This sublime fellow is a fat bastard of ground tenderloin, ribeye, and chuck flavoured with onion, garlic, and long peppercorns. It’s mounted with double smoked bacon, aged Canadian cheddar, a perfect onion ring, crisp lettuce, and fresh tomato. The sesame seed bun sustains quite a bit of squeezing and juice, and it comes generously smeared with an incredibly tasty ketchup-based house sauce that includes licks of sweet smoked paprika, ancho chilies, herbs de provence, Worchestershire sauce, brown sugar. With a side of hot and crisp-edged frites served with mayo, it weighs in at a hefty $19 and is absolutely in contention despite the high price tag (for a burger). Also in the running for the totally subjective title are the burgers of currency at Pourhouse, Mamie Taylor’s, The Oakwood (the new one), Cannibal Cafe, and Campagnolo Upstairs. Not in the running are the ghost burgers of gluttonies past at Feenie’s, DB Bistro Moderne, Au Petit Chavignol, and Fray. If basic is your bag, try Save On Meats or the internet hype machine known as Hamburger $2.85.

Vancouver, BC | A decade spent in England – working at top restaurants such as Le Manoir aux Quat’ Saisons and visiting pubs in his downtime – might have influenced Chef David Hawksworth’s culinary career but it was his childhood memories of a family roast dinner that have driven the newest addition to Hawksworth Restaurant’s Sunday menu, launching this weekend.

Roast dinners are a quintessentially British weekend pastime and Chef Hawksworth’s fond recollection of Sundays spent relaxing with his parents, originally from Yorkshire in the north of England, resulted in the nostalgic addition of a roast dinner to the menu.

Hawksworth Restaurant will be launching a weekly roast feature to the brunch menu, starting this Sunday (December 8th) with a juicy Kurobata rack of pork accompanied by pancetta spiced brussel sprouts, roast potato, cranberry, pork jus for $34.

Vancouver, BC | Yesterday, Paul Moran won the inaugural Hawksworth Young Chef Scholarship competition, held at the Pacific Institute of Culinary Arts. The 26-year-old from Kelowna withstood the heat of the kitchen to beat nine other finalists to win a $10,000 cash prize presented by Chefs’ Table Society of BC and a stage at an international restaurant of his choosing.

During yesterday’s final, Paul cooked alongside nine other contestants – each finalist created a recipe using specified ingredients and created their dish for the panel of Canada’s most revered chef judges. Paul made it to the final three with 23-year-old Brad Masciotra from London, Ontario and 27-year-old Carmen Ingham from North Vancouver, BC who was named Le Creuset’s Rising Star. The trio was challenged to a black box cook-off using the mystery ingredients of Freybe Schinkenspeck, steelhead trout, lobster, meyer lemon, heart of palm and almonds to create a winning dish.

Paul’s main and dessert dish wowed the panel of judges with his creativity and he won points for his technical ability, judged by Hawksworth Restaurant’s Chef de Cuisine Kristian Eligh and President of the Chefs’ Table Society of BC Chef Scott Jaeger in the kitchen. Paul also won over the judges during a taste test that impressed the panel of Chef David Hawksworth, Chef Vikram Vij, Chef Normand Laprise, Chef Mark McEwan, Chef Anthony Walsh and respected food writer Jacob Richler.

“All the judges have been blown away by the dedication, passion and creativity of the young chefs,” says Chef David Hawksworth. “We created this competition to find the creme of Canada’s culinary talent and we’ve found it in Paul Moran.
