Vancouver, BC | Eric Pateman, proprietor of Vancouver’s vibrant Edible Canada Bistro, is pleased to introduce Tyler Dallner as Chef de Cuisine. “We are incredibly fortunate to welcome someone with his passion, experience and vision to lead our culinary team” says Pateman. “Tyler is an incredibly promising young Canadian chef with experience ranging from Canada’s hallowed Langdon Hall, to the world’s leading restaurant, Noma in Copenhagen.”

Dallner graduated from the Culinary Management Program at George Brown College in Toronto and, while he gained extensive knowledge through his experiences cooking in Europe, he sought to establish his career on Canada’s West Coast where he could carry out his passion for ancient farming methods and wild foraging, both traditions deep-rooted in the Canadian food culture. “It’s clear that the local food movement is growing here in B.C., but at Edible Canada we are approaching it from a different angle” he explains. “We source the finest ingredients from the Vancouver area while paying homage to all the cultures and emerging food traditions that this vast country is carving for itself. Our food encompasses Canadian cuisine, not just West Coast.”

Vancouver Gets Set For “BC Distilled”, A Festival Celebrating The Best Local Spirits

On Saturday, May 10, 2014, sixteen of the province’s leading small-batch distilleries (plus one from the Yukon) will be bringing their gin, vodka, whisky, and other fine spirits and liqueurs to Vancouver for BC Distilled – British Columbia’s premier micro-distillery festival.

In recent years and at an accelerating pace, bottles of local artisanal spirits have been landing on (and flying off) the shelves at restaurants, bars, and liquor stores across the province. Hosted at CBC Vancouver, BC Distilled will not only provide a single-stop opportunity for craft spirit lovers to taste and appreciate a huge number of these new products, but also a chance to meet and greet the people who have been doing the crafting.

Beverages from Bittered Sling Extracts, Walter All-Natural Craft Caesar Mix, and SIP Soda will complement the wide range of spirits on offer, and attendees will also be able to enjoy bites from local restaurants such as Grain Tasting Bar, Forage, Blackbird Public House & Oyster Bar, The Distillery Bar + Kitchen, and Edible Canada.

Vancouver, BC | Edible Canada’s 2014 Guest Chef Market Dinner dates have officially been released today, and as always, it is generating one of their busiest booking days of the year. While welcoming back many of our guest favorites, they have also lined up several new local celebrity chefs to create an all-star series for the year. New this year, all of the guest chefs will be showcasing a specific theme – be it maple syrup, BBQ or even “Aphrodisiacs with a Twist”. It is going to be an educational and fun year!

These special evenings take place in the bistros state-of-the-art demonstration kitchen where up to 24 guests will enjoy an exclusive, multicourse dinner prepared by some of the best and most talented chefs in Canada. The dinners are only $80.00 per person and include a selection of wine, beer or spirits paired by their bartender or in-house sommelier.

Hosting the series for a sixth year, Edible Canada Founder, Eric Pateman, has a passion for celebrating Canadian cuisine while telling the stories of local talent. “It’s an honour to share our space with these talented chefs to showcase the food community at large” he states. “There is no ego involved here. Vancouver, BC | The team at Edible Canada was honoured to work with Okanagan Crush Pad to craft a special wine for the bistro. OCP Winemaker Michael Bartier worked with Edible’s management team to come up with 100 cases of a beautiful blended red wine made from Gamay Noir grapes grown at Secrest Mountain Vineyards in Oliver and Syrah grapes from the Cerqueira Vineyard on the Black Sage Bench.

Suitably named Market Red, the thoughtfully designed label depicts a detailed sketch of Granville Island and the public market, home to Edible Canada’s headquarters (you can make out the Bistro under the Granville Bridge on the back label). The wine will be available by the glass and bottle at the Bistro, as well as at a few select private wine stores in Vancouver.
