Vancouver, BC | Vancouver’s top culinary classroom will celebrate all things Okanagan with a special cooking class on May 5th, 2013 highlighting recipes from the popular cookbook The Butcher, The Baker, The Wine & Cheese Maker – An Okanagan Cookbook. In a unique twist, The Dirty Apron will welcome three Okanagan chefs to demonstrate their passion for BC bounty, each teaching his or her own recipe from the book.
Chef Natasha Schooten of Terrafina Restaurant in Oliver will teach the first course: Harker’s Organic Spinach and The Farm House Natural Cheeses Fromage Frais Fritters with Kale Pesto and Apple Mustard. This flavourful starter will be followed by Slow Cooked Halibut with Basil, Crisp Sweet Life Farms Potatoes, Stoney Paradise Tomatoes, and Artichoke Chardonnay Emulsion as taught by Gold Medal Plates Award winner Chef Mark Filatow of Waterfront Restaurant & Wine Bar in Kelowna. And, what better way to finish a perfect meal than with an expertly prepared Apple Tarte Tatin as demonstrated by Chef Sandrine Raffault-Martin, owner of Sandrine French Pastry & Chocolate in Kelowna. Vancouver, BC | On Wednesday, November 14th, The The Dirty Apron is holding a four course plated dinner to help raise awareness for the children’s charity, Reign Foundation. The set menu features delectable dishes like Lemon Chive Risotto with Lobster Medallion and Braised Beef Short Rib over caramelized onion and truffle ravioli, all prepared by The Dirty Apron executive chef/owner and Reign Foundation board member, David Robertson.
The Reign Foundation has been helping educate and support underprivileged children of Cambodia since 2007 by creating awareness in small communities on the importance of health and education. The Foundation provides children and their families with appropriate tools and supplies such as school materials, uniforms, bicycles and home visits. Robertson has been on the Reign Foundation board since its inception and has seen first hand the positive impact the Foundation has had on the Lvea Em District in Cambodia.

Postcards From The Crazy Trans-America Trail From Chambar Chef Nico Schuermans

What does any right thinking chef do after opening three successful businesses in six years and becoming a father, twice? He grabs his motorcycle and leaves, of course (well, if only for a while).
We usually do enough field trips on Scout, but Karri Schuermans, wife and partner of chef Nico Schuermans (think Beatty St.’s Chambar, Medina, Dirty Apron) sent in these envy-inducing photos of Nico and his good friend Jesse Keefer (of the awesome Bodega Ridge on Galiano Island) riding the famously grueling Trans-America trail, which starts in northeastern Tennessee and ends at the Pacific at the bottom of Oregon. As a big fan of the Long Way Round films (and Nico and Jesse), I can only imagine how awesome it has been for them. The trail is over 4,800 miles of mostly off-road riding, so it’s quite different from the relative coziness of a Route 66. According to Karri – who has been getting updates and snapshots from the road – their travels have included a lot of dirt and great people (save for some Uncle Daddy weirdness in Mississippi). Nico t-boned a cow on his bike (both were fine) and had to tow Jesse for a while after his clutch broke, but beyond that, they’ve endured a lot of amazing scenery and had a wonderful time. They hit Oregon yesterday and are ecstatic to have real coffee for a change. Karri reports that “they may make it back tonight if the weather holds up, and are looking forward to a great meal and beers!” We hope the last of their journey is a safe one, and welcome both of them home.

Reminiscent of the general stores of old, the Delicatessen is housed in a historic brick and beam building in Vancouver’s Crosstown neighbourhood within the wildly popular Dirty Apron Cooking School.
Sandwich lovers will rejoice in the creations of Chef Nico Schuermans, whose pulled pork with Japanese mayo, pickled carrots, bean sprouts and cilantro on French baguette is a fresh take on a Vietnamese sub. Other sandwiches like chicken with chipotle mayo and roast tomatoes, prosciutto with fig and Cambozola cheese, hummus with avocado, mint carrot and pomegranate molasses, or the roast beef with chorizo, chimichurri, and charred tomato salsa are also sure to satisfy. Nico will also be offering a Roast of the Day and gourmet sides for healthy take-out family meals, the a perfect weeknight answer to that “what’s for dinner?” question.
In the grocery aisle, don’t miss Chambar Pastry Chef Eleanor Chow’s incredible toppings, previously only available as a delectable waffle side at Café Medina up the street. Vancouver, BC | Love food but tired of cooking for one? The Dirty Apron Cooking School is bringing city singles together in a class designed to help students meet their match in the kitchen. The class will be a no-pressure combination of cooking, wining, dining and dating, matching male and female students together to co-create gourmet dishes.
With 20 spaces available, students will have the opportunity to meet 10 like-minded food lovers. Paired up at random, each student will cook smoked salmon blinis with lemon yogurt, harrissa prawns with herb salad, seared Hallumi with pomegranate molasses, herb crusted lamb medallions, and chocolate soufflé with chocolate dipped strawberries; rotating between stations to mingle and meet as they cook and eat. Breaking the ice a little further will be Michaela Morris and Michelle Bouffard of House Wine, who will offer commentary with each dish to help demystify wine pairings (and possibly the opposite sex).
The first Singles in the City class will run on Saturday, July 31st and will continue once each month thereafter. Each student is guaranteed to leave at the very least with a few new recipes. Vancouver, BC | The Dirty Apron Cooking School is putting kids in the kitchen this summer. Beginning July 5th the school will launch its first kids camp with the goal of teaching children aged 7 to 11 and teens aged 12 to 17 the skills to prepare basic meals while learning about healthy eating and where their food comes from.
The weeklong camp will focus on how to use a knife safely and with confidence, the basic building blocks of nutrition, and sourcing local ingredients. In addition to being armed with kitchen know-how, students will be in charge of dishing up their own menus, so by week’s end they’ll be crafting a healthy breakfast, lunch and dinner without furrowing a brow.
The camp will be offered for ages 7-11 and 12-17 with classes running Monday to Friday from 10am to 2pm throughout the summer months. Space will be limited to 24 students per class. Tuition for the camp is priced at $450 and includes a daily recipe book, closely supervised hands-on instruction and all meals. Vancouver, BC | The team that taught you how to impress your dinner guests with delicious menus and savvy kitchen skills will soon take your cooking one step further. On June 21st The Dirty Apron Cooking School will launch Gourmet Bootcamp, the school’s first class series covering kitchen fundamentals. The weeklong program that will run throughout the summer and fall months is designed to teach the tricks of the trade, and students are guaranteed to leave with more than a few industry tricks under their toque.
Led by industry veteran and professional instructor Walter Messiah, Gourmet Bootcamp curriculum will focus on kitchen fundamentals and building a culinary foundation. Spread over the course of five days, instruction will begin with the basics of crafting stocks and sauces and will then move on to essential knife skills, meat and butchery, preparing and cleaning fish and shellfish, working with grains and vegetables, and the art of desserts and pastries. On the final day of the course, students will be tested with a Black Box style challenge that will have them crafting a three-course menu from a box of mystery ingredients. Read more
