Being one of Vancouver’s premiere seafood destinations, we are bringing the bounty of our local seas to one of the city’s favourite weekend traditions. Guests can open with a selection of local oysters and bubbles before moving onto a full brunch menu. Panko-fried oysters on waffles are a fantastic riff on the classic chicken and waffles; the Croque Madame gets a distinctly west coast update with local Dungeness crab; and house cured salmon pairs with locally made breakfast sausages and lobster hash on our savage Hook and Trotter platter (please bring your appetite). Vancouver, BC | The Cork & Fin team is proud to announce three new additions to our management team as well as a brand new menu. Dan Marcenko has joined the team as our Executive Chef and he brings with him a wealth of knowledge. Having most recently spent time with in the Parkside Group working as the Chef at Cafeteria as well as corporate tourneau for the company. His new menu is inspired by classic French and Italian preparations with his own west coast spin.
Rodney Scharf is one of two new restaurant managers. His experience has taken him through some of the city and countries finest companies, most recently working with Mark Brand Inc. helping to build Save On Meats as well as running the highly touted Boneta. Before that he spent time with the Fairmont Hotel group. Jonathan Roth is the second addition to the Front of House team. His love of all things boozy has taken him through a number of restaurants and bars, where he has built his knowledge of cocktails, beers and wine that help make him a valuable member of the team. We have prepared an incredible menu to pair with these beautiful wines that represent some of the best juice in BC. Most are familiar with the Platinum series from CedarCreek. However, if you haven’t yet heard about ‘Tradition’, this wine will be a show stopper. Combining the wildly popular made-from-scratch brunch of Two Chefs and a Table with the fresh seafood focus of Cork & Fin, the one-off menu spins brunch classics in unexpected and mouth-watering ways.
Some of the dishes like the Po’Boy Benny made with local oysters and Big Lou’s bacon and the Shrimp & Grits which matches local king stripe shrimp with housemade grits have a distinctly Southern feel. Others, like the East Coast Lobster Hash and Fruits de Mer are inspired by places much further East. This fall, many of the Downtown East Side’s (DTES) best restaurants are joining together for Eat Drink Local, a celebration of the food scene in Vancouver’s most energetic culinary neighbourhood.
Drawn by accessible heritage commercial spaces and the growing community of restaurateurs, the neighbourhoods of the DTES—Gastown, Railtown and East Hastings– have emerged as the engine driving Vancouver’s food and cocktail culture. The young, dynamic chefs, operators and bartenders who have moved into the neighbourhood have helped to define a unique Vancouver food style that’s built on local ingredients, excellence without pretention, the spirit of adventure and a passion for the art and craft of food and cocktail preparation.
In the spirit of the fall harvest and Thanksgiving, this October will see the launch of the inaugural Eat Drink Local food celebration. From October 31—November 3 and November 7-10. Eat Drink Local will shine the spotlight on a group of Downtown restaurants with special menus and events.

About The Restaurant
Set in the heart of Gastown in the historic Alhambra building, Cork & Fin is one of Vancouvers top seafood restaurants. The restaurant glows with the warmth of soft candle light, exposed brick and the antique banister framing the bar. The Raw Bar at the front provides the launching area for dozens of oysters a night as well as our famed Seafood Towers. The hot kitchen plays host to wonderful grilled whole fish, scallops and an array of carnivorous options.
Owners Elliott Hashimoto and Francis Regio work tirelessly to provide the best seafood experience for an affordable price. Working with local purveyors and farmers as much as possible has become de rigueur for the entire Cork & Fin team.
A small concise wine list is the backbone to the bar program that strives to deliver on all fronts, whether it be the seasonally changing cocktail list or an ever changing selection of local and international beers.

A purple (yes, purple) Bentley Arnage was parked in the loading zone on Carrall St. in front of Cork & Fin and L’Abattoir for close to three hours last night and it didn’t receive a single scratch. A couple of drunk Surrey douches fresh from The Blarney may have peed close to one of the tires, but beyond that…yeah…not a scratch!

Gastown To Land Likely Keeper With The Upcoming Cork & Fin…

Francis Regio, formerly (and long) a fixture at the West End’s much loved Tapastree, has taken over the old Blake’s location at 221 Carrall St. (corner of Blood Alley next to the original Irish Heather). He plans to open a new seafood and wine bar called Cork & Fin by the middle of February. I caught up with Francis yesterday at the location with the restaurant’s chef, Elliott Hashimoto (ex-Brix, Tapastree), and took the nickel tour. It’s a small, two level spot with an open raw bar and dining room on the main floor and some more seating up the short and very beautiful set of stairs. From what I was told, it sounds like we can expect something akin to a hip and considerably more casual Blue Water Café. A few snaps below… Read more
