Vancouver, BC | With two busy restaurants, an award-winning butcher shop and a successful catering company under their umbrella, new menu and product development is a never-ending process for the Two Chefs and a Table team. Beginning September 18th, the public will be given a window on that process as the Gastown bistro launches their new Test Kitchen Tuesdays program.

Each Tuesday, the Two Chefs and Big Lou’s culinary team will gather at the bistro to work on new dishes and menus and the doors will be thrown open to allow interested friends, regulars and food lovers in to try these new ideas and dishes while interacting with the chefs in an informal setting. The open kitchen will allow patrons to watch the crew at work while they enjoy everything from fresh cuts from Big Lou’s Butcher Shop and new creations out of the smoker to more refined preparations for tasting menus and paired wine dinners (depending on the week).

Home chefs and foodies will be able to get a little closer to the culinary process and interact with the Chefs picking up pointers for their own food adventures at home. The Chefs will be on hand to present and explain the dishes, field questions and, of course, solicit feedback. Read more

Vancouver, BC | Summer long weekends and the BBQ are a perfect match and on BC Day, Monday, August 6th Dockside Restaurant will welcome Big Lou’s Butcher Shop as they make a guest appearance to cook up some of their award-winning locally-sourced meats on Dockside’s famous patio. The Big Lou’s Butcher Shop team will be cooking up and serving their grill classics to enjoy on Dockside’s patio from 12-5pm on BC Day. This is the first time that the Big Lou’s Butcher Shop team have offered their BBQ to the public outside of their shop and it will be a one-of-a-kind chance to enjoy Big Lou’s Butcher Shop in one of Vancouver’s most spectacular settings.

Working closely with Dockside Chef Simon McNeil, they’ve created a menu which incorporates Dockside’s signature beers into the recipes. Along with classic beer-braised beef ribs and Old Bridge Dark Lager BBQ Pulled Pork, Big Lou’s will be serving a unique Sloping Hills Pork and Shrimp Sausage made with Dockside’s hibiscus-infused Jamaican Lager and served with a housemade Hibiscus brown mustard. The cost is just $18 per person for a heaping plate of BBQ and sides and, of course, the BBQ goes perfectly with one of Dockside’s fresh in-house brewed signature beers. Vancouver, BC | Big Lou’s Butcher Shop recently celebrated one great year in business in Vancouver’s East Side. Since opening, Big Lou’s has worked hard to build a following for its wide selection of ethically and sustainably raised meats, custom craft butchering and delicious deli sandwiches.

Recently, year two for Big Lou’s got off to a superb start with the arrival of a envelope from WEVancouver (formerly the Westender) which contained the Gold Medal for Best Butcher in the 15th Annual Best of Vancouver Awards. First place!

“We’re incredibly proud to win this award after only one year in business,” said Big Lou’s Butcher Shop partner Allan Bosomworth. “We want to say thanks to everyone who’s stopped by during our first year and especially those who took time to vote for us in the Best of Vancouver Awards.”

Located in a bright heritage storefront at the corner of Gore and Powell Streets, Big Lou’s Butcher Shop has brought traditional European boucherie-inspired butchery and preparation to Vancouver’s East side culinary community and residents. Big Lou’s combines a retail butcher operation, a New York-style deli sandwich counter, boucherie-based catering services, butchery classes and a unique event and dining space into one place.

In a tribute to old world butcher shops, Big Lou’s Butcher Shop supplies a diverse selection of meats from award-winning local suppliers like Polderside, Pemberton Meadows, Sloping Hills and Two Rivers along with seasonal game and imports. The shop is hands-on, with a focus on head-to-tail butchery and in-house handmade products like sausage, charcuterie, stocks and sauces–all made as much as possible using our own home-grown herbs. The guiding principle throughout is to have all processing done in house under the watchful eye of our team. To serve the full spectrum local residents, Big Lou’s Butcher Shop also stocks a selection of certified meats and poultry alongside the small farm choices to offer the widest range of price points to customers.

Led by chefs Karl Gregg and Allan Bosomworth, Big Lou’s Butcher Shop is in the traditional butcher shop style with an in-house cutting area, large display case and expert staff crisply-dressed in traditional oxford shirts and aprons. Along with meats, the product offering also includes an ever-changing menu of house made fresh sausages, charcuterie, pates, stocks, gravies, demi-glaces, and other dressings and ingredients. The focus on rubs, marinades and grilling accompaniments makes Big Lou’s the one stop for expert advice and quality ingredients before any BBQ.

The sandwich counter is dedicated to true deli-style sandwiches built around traditional cooked, cured and smoked meats. All the sandwiches are built around great flavours built into fresh breads and detailed authentic recipes. Reflecting the diversity of the City, sandwich favourites include the Banh Mi and Bulgogi Chicken alongside classics like in-house made Pastrami, Porchetta, Roast Beef and Meatball.

Big Lou’s Butcher Shop also offers catering and butchery classes The catering is based on the deli menu and also includes with a range of custom menu options and special requests. Big Lou’s is also available for event including reception style or seated dinners in the great naturally-lit, character shop space. The market-driven menus will emphasize rustic French and Italian tastes and focus on integrating fresh, sustainable Pacific Northwest ingredients into those two great food cultures. Butchery classes span sausage-making and basic butchery to whole carcass work and game butchery.

Butchery is again at the forefront of food culture in Vancouver and Big Lou’s has been a leader in reintroducing traditional, artisanal butchery skills to Vancouver’s vibrant food scene.
