Chef David Hawksworth Set For Pop-Up Lunch Series in Whistler

Vancouver, BC | On Saturday, January 19, 2019 Chef David Hawksworth, owner of Vancouver’s award-winning Hawksworth Restaurant, Nightingale Restaurant and Bel Café gets set to kick off a three-part culinary series atop Whistler Mountain’s Steeps Grill & Wine Bar for the fourth annual Hawksworth x Steeps Whistler pop-up lunch series. Offering a three-course lunch beginning at 11:00am, guests can re-charge between runs, or simply enjoy the slopeside views of North America’s largest ski resort.

“Second to cooking, skiing is one of my greatest passions and I couldn’t be more excited to once again partner with Whistler Blackcomb for an après ski pop-up at Steeps Grill & Wine Bar” says Chef David Hawksworth. “With such an incredible start to the season, I’m looking forward to hitting the slopes and sharing an amazing culinary experience with my fellow mountain lovers.”

The first of three pop-ups, Saturday is set to feature a selection of four starters, four main dishes and two desserts; with similar menus offered for the following lunches on February 9th and March 16th. Done in signature Hawksworth style, dishes will be presented using fresh and locally sourced ingredients, complimenting Whistler’s incredible natural beauty. Accompanying the menu and back by popular demand is featured Hawksworth Restaurant cocktail, The Hotel Georgia. Awarded enRoute’s cocktail of the year in 2012, this flavourful concoction is made up of orgeat, gin and orange blossom water; creating the perfect aperitif.

The mountain top culinary journey begins with a variety of starters, including a roasted beet salad with whipped goat cheese, raspberry vinaigrette, and pine nuts; a warming thai roasted carrot and coconut soup; crispy braised pork belly with tahini and cashew dressing; and salmon gravlax with honey mustard dressing and gnocco fritto. The main course offerings are comprised of a flavoursome tomato and saffron fish soup with baked ling cod, manila clams, grilled focaccia and basil rouille; a hearty beef bourguignon with baked sweet potato, smoked bacon, crème fraiche and scallion; a delicious roman pizza with fior de latte, roasted mushrooms, confit garlic and arugula; as well as a succulent grilled chicken served with vermicelli noodles and crunchy vegetables, topped with a peanut and chili-lime dressing. To finish, enjoy a rich sticky toffee pudding with candied pecan, bourbon butterscotch and maple whip; or a delicious orange creamsicle tart with vanilla chantilly and candied orange.
