Botanist Chef Hector Laguna Creates New Year’s Eve Feast and New Year’s Day Brunch

Vancouver, BC | At Botanist, Chef Laguna has created a six-course menu that features house made pappardelle, lobster bisque, grilled swordfish, and strip loin with a mandarin champagne profiterole. There’s live music all night and the first seating, from 5:00 pm to 8:00 pm is $148 per person. The second seating from 8:00 pm includes a midnight countdown and bubbles for $168 per person. Resolutions & Remedies New Year’s Day Brunch is a prix fixe for $68 per person and includes a sparkling welcome cocktail, revitalization shot, chef’s choice amuse, and selection from the menu that includes French toast, oatmeal, scrambled eggs with bacon and sausage, shredded pancake with caramelized apple, pappardelle, or confit duck with creamy polenta.
