You Need To Try the Refreshing ‘Sunrise Ruby’ Cocktail at Gastown’s Tacofino

Patio season is well underway and given the ten months of rain we suffer through to get here, we must take full advantage. There are few things that scratch that warm weather itch better than sitting outside enjoying a sparkling cocktail with a side of chips and salsa. If this is you jam, consider heading over to the Tacofino Taco Bar in Gastown. The patio is a wonderful spot to indulge in your favourite summer fare and their cocktail menu is filled with drinks perfectly fit for the season.

Case in point, the Sunrise Ruby. This refreshing sipper is a riff on the French 75 – a classic created in the 1920’s. The original combines gin, lemon, sugar and sparkling wine and should be consumed judiciously as it has a more intense kick than you would assume for such a light and refreshing cocktail. You’ll face a similar issue with the Sunrise Ruby which goes down just a little too easy. The riff trades gin for tequila and lemon for grapefruit and lime. Topped with cava, this update on the classic pairs perfectly with an afternoon of patio-chilling and perhaps even a few tacos for good measure.
