Start with light and refreshing plates such as a pea amuse bouche, a sustainably-sourced prawn dish, and smoked salmon served on traditional birch skewers. Continue with pheasant served with leeks, caramelized black garlic and a balanced almond cream; followed by a bison dish, garnished with pine and wildberries in a dehydrated carrot reduction. Chef Bennett offers a distinctive chaga dish as a subtle palate cleanser, before ending on a sweet note with fresh rhubarb in sweet cream and wood sorrel.
