Chef Mark Singson to Prepare Tribute Feast to Granville Island Public Market at Edible Canada

Vancouver, BC | Top Chef Contestant Mark Singson is on the rise. Living and cooking in Vancouver BC, he has built his reputation on his creative uses of vegetables and techniques. The fresh flavors and surprising textures he presents were sharpened through years of experience at many different venues, including Annalena, St. Crispin, Vue du Monde, The Oakwood, Boneta, Fairmont Pacific Rim, Kokomo, and Coast.

Mark owns and operates FAM Inc., where he hosts pop-up dinners, providing guests with an ‘evening of unique and thoughtfully prepared food and drinks.

On May 21st, Mark is hosting a dinner at Edible Canada facilitated by ingredients found in the Granville Island Market – a place we have come to refer to as ‘Mark’s Pantry.’ This dinner is designed to translate Mark’s lifelong love of the market, a place he has been coming since the early stages of his career in search of seasonal produce, locally sourced ingredients and the wisdom of the vendors.

It will be a great opportunity to interact with the chef and take a deep dive into his cooking style and food thoughts. This will be a 4-course dinner paired with liquor and some other surprises along the way.

Burger Inspired – Beef carpaccio, pickled shallots, iceberg, charcoal mayo, burger bun croutons

Fish of the day – Herb jus, pickled apples, nori chip, xo sauce, cilantro

Braised pork belly – Roasted onions, chicken skin crumb, garlic rice, soy vinegar reduction,

Dessert – Coconut 3 ways, cacao nib, crushed ice, olive oil


Tickets are $98, and are all inclusive: Food menu, liquor pairings, gratuities, and taxes are included. There are two seatings available: 6:30pm and 7pm.
