Kitsilano’s ‘Fable Kitchen’ Debuts New Lunch and Dinner Menus Today

Vancouver, BC | Fable Kitchen has been delighting diners with their iconic farm-to-table fare since 2012 and is excited to announce the first redesign of their lunch and dinner menus that will combine fan favourite dishes with new flavours in the same unpretentious style.

Located in the heart of Vancouver’s Kitsilano neighbourhood, Fable Kitchen is defined by a commitment to local. Under the helm of renowned chef and two-time Top Chef Canada finalist Trevor Bird, Fable Kitchen uses expert technique to make the best of what our natural harvest has to offer. Working closely with local producers, Chef Bird has crafted a menu that celebrates fresh, ethically sourced ingredients and practices “ground up cooking,” where everything that can be made in-house from scratch, is done so.

The new menus maintain this founding mandate and will introduce diners to new dishes crafted from BC’s best local ingredients. Guests can look forward to items like roasted BC king oyster mushrooms served with jalapeno, garlic, crispy enoki mushrooms, and parmesan; house-made angel hair pasta served in a pork Bolognese; or ling cod with celeriac remoulade. And for dessert try the new squash cake with mascarpone mousse and vanilla ice cream or Chef Bird’s take on the campfire favourite s’mores, made with a flourless brownie, graham crackers, and chocolate ice cream. All pasta is made in-house daily and all meats are locally raised.

Also new are the selection of “Take Home” items, which allow diners to bring the flavours of Fable Kitchen home with them. Chief among these is Trevor Bird’s Black Pepper Jam, a staple on the menu since day one and a longtime guest favourite. After countless requests, the recipe has finally made its way onto the production line and is available for purchase in stores and meat shops around town, as well as in the restaurant itself. A truly versatile condiment, black pepper jam is delicious on everything from steak to roasted vegetables and toast.

Practicing cuisine that is founded in local, seasonal flavours is a study in evolution, as each day brings with it new ingredients and opportunities to innovate. This experience is what drives Fable Kitchen and led to the debut of the new menus, which themselves reflect how the restaurant has evolved over time.

In keeping with this spirit of evolution and renewal, the new menus will be constructed from recycled chopsticks!
