Vancouver, BC | Farmer’s Apprentice Welcomes Trevor Moran, formerly of The Catbird Seat, Nashville Tennessee. Brought to you by the Vancouver World Chef Exchange. David Gunawan and David Jackman have always been attracted to Moran’s approach to cooking: stripped down seasonal products. The meal will be a multicourse collaboration between Moran and Gunawan’s team at the Farmer’s Apprentice. Sommelier Kieran Fanning and Bar Manager Satoshi Yonemori will create a well curated beverage pairing for the evening. Gunawan’s intention is to share a unique gastronomic experience and to create an international community of like-minded chefs.

Chef Trevor Moran | Trevor Moran is an Irish born chef living in Nashville, Tennessee. After leaving his post as the sous chef at forward thinking Noma in Copenhagen Trevor led the kitchen at The Catbird Seat. Trevor’s mix of Nordic sensibilities and Southern hospitality peels back the pretension of high-end food and focuses on what matters most: the ingredients. Since stepping down from the position at The Catbird Seat he has been travelling abroad exploring wood fired cuisines, and collaborating in kitchens. So far he’s worked with Burnt Ends in Singapore, Lyle’s in London, and Auberge Carmel in Monterey.
