Vancouver, BC | The final two events of Edible Canada’s Canadian Table Dinner series are both unique and full of talent, featuring the work of Fable’s Chef Trevor Bird and Chef Jonathan Chovancek of Bittered Sling, on November 13th and December 5th respectively. The November 13th dinner with Chef Trevor Bird showcase sustainably and ethically sourced meat in a evening entitled BC’s Best, with a menu paired by Corcelettes Estate Winery, for omnivores only. On December 5th, cocktails take centre stage at ‘Spirit of the Season’, a vegetarian-friendly event prepared collaboratively by Chef Chovancek & Chef Grignon and hosted by two talented Canadian bartenders from Bittered Sling, Katie Ingram of L’Abattoir in Vancouver and Toronto’s Chantelle Gabino.

The 2017 Canadian Table Dinner series has brought some of Vancouver’s most talented chefs to the Edible Canada Bistro this year, including popular evenings with Chef Chris Whittaker of Forage and Chef Brian Luptak of the Acorn. This year-long exploration of Canadian cuisine are intimate dining events, taking place at two long tables and hosted by experts in their fields. Our guests have had the opportunity to interact with the chefs, winemakers, distillers, whisky afficiandos and other tastemakers in the food and beverage industry while sampling extraordinary and carefully curated menus paired with wine and spirits from across the country.

Celebrate BC’s BEST: PASTURE & RANGE

If you have not made it out to one of the Canadian Table events this year, now is the time to put one (or two!) in your calendar. On November 13th, join Chef Trevor Bird for an evening celebrating ethically sourced pasture and game meat, with a care for both animal welfare and a zero-waste philosophy. Learn about both his revolutionary side project called ‘MeatMe’, which aims to connect consumers with the meat products they consume while eliminating waste of less popular cuts of meat, and about the significance of game meat to Canada’s culinary heritage. Guests will taste a wide range of dishes from elk tartare to alfalfa fed Lamb Meatballs, with a menu designed for meat lovers only. The menu will be paired with the best of the lineup from Corcelettes Estate Winery, located in Keremeos, BC, in the Similkameen Valley wine region. This award-winning winery has capturing hearts and palates recently, bringing home gold medals in 2017 at both wine align and the All Canadian wine championship.

ABOUT CHEF TREVOR BIRD

Trevor Bird began his foray into the culinary world as a teenager. His career led him into acclaimed kitchens such as Ottawa’s National Arts Centre, Jean George’s MARKET, and Daniel Boulud’s Lumiere.

In 2011, Trevor secured his rising star status by placing runner up against some of Canada’s greatest chefs in “Top Chef Canada Season 2.” In 2012, Trevor created Fable, his own restaurant in which he practices his passion for locally focused ingredients and showcases British Columbia’s regional bounty in all of the menu’s dishes. Within a short time, Fable Kitchen became the recipient of numerous accolades and quickly rose to become one of Vancouver’s favourite dining destinations. It exemplifies the best aspects of a farm to table philosophy, connecting diners to the source of every dish.

In 2015, Trevor Bird took his success to new heights and opened a second restaurant just off Main Street. The more casual ‘Fable Diner’ maintains the same connection to the land and philosophy of sourcing both ethical and sustainable meat.

With two successful restaurants under his belt, along with an impressive list of international guest chef appearances, Trevor returned to television in 2017 as a contestant on Top Chef Canada All Stars.

His ‘MeatMe’ project makes perfect sense to anyone who knows Chef Bird and what he stands for. It is an innovative solution which is all about making an impact on how we source our products in the most sustainable way. The evening at Edible Canada on November 13th will celebrate these intentions with every dish.

Celebrate Spirits: THE SPIRIT OF THE SEASON

On December 5th, Edible Canada and Bittered Sling Bitters will be hosting a holiday celebration with a cocktail-paired menu for the ages. Kick off the holiday season in style with a special Bittered Sling pop-up! Guests will be treated to innovative and seasonal cocktails from two of Bittered Sling’s most talented bartenders, Katie Ingram and Chantelle Gabino, accompanied by a collaborative meal prepared by Chef Jonathan Chovancek and Edible Canada’s Chef Tobias Grignon. Any evening for cocktail lovers, these two award-winning bartenders will be working with spirits from a few of Edible Canada’s favourite BC distilleries. Sample the best from Bittered Sling Bitters, Arbutus Distillery, Odd Society, and Wayward Distillation House. This evening will finish the dinner series with a bang, and bring together some of the most creative and accomplished leaders in Canada’s food and beverage scene.

More About the Bittered Sling Dream Team

In 2012, bartending legend Lauren Mote and popular Vancouver chef Jonathan Chovancek launched Bittered Sling — a retail line of high-quality, cocktail bitters and culinary extracts using exceptional ingredients that provides the palate, plate and potion with a powerful and exciting fusion of flavours — and quickly built a reputation in the international cocktail and culinary community. The quality of the team they have assembled to make this evening memorable is a testament to the quality of the Bittered Sling product, and each cocktail for the evening will showcase the subtle balance this unique line of bitters offers.

Chantelle Gabino
Chantelle is a born and raised Canadian bartender with over 7 years of experience behind a bar, and over a decade in the hospitality industry. Chantelle utilizes her long standing love of food & drink in order to create beautifully balanced and creative cocktail recipes, lasting impressions, and hospitable experiences for any setting. With a thirst for expressing both her passion and creativity in any project she tackles, she is always excited to take on a new challenge. As the former GM and Beverage Director for Parts & Labour in Toronto, National winner of Bombay Sapphire’s “Most Imaginative Bartender of 2016” and Bittered Sling Ambassador, she has been able to gain a wealth of knowledge and experience from all over the globe. Reconnecting with her roots of growing up in West Coast on the Pacific ocean, in the mountains as well as in the lush forests of British Columbia, her recent projects incorporate incentives to embrace sustainability, as well as ingredients and practices aimed at showcasing what mother nature has to offer.

Katie Ingram
Katie moved to Vancouver after completing a Theatre degree in Toronto. Katie’s love of spirits and cocktails grew into a passionate obsession, as she learned the art of bartending and hospitality. Katie is currently the Head Bartender at Vancouver’s L’Abattoir Restaurant, listed as one of Canada’s best restaurants in En Route Magazine, a Canadian Ambassador for Bittered Sling, and the former Lead Bartender at UVA Wine & Cocktail Bar. Katie has always had the desire to learn, create, and perform, with the guest experience at the forefront. Katie is a Bittered Sling #Bitterbabe.

Jonathan Chovancek
For more than 20 years, Chef Jonathan Chovancek’s abundant enthusiasm, inspired creativity and commitment to healthy eating has provided a winning recipe for some of British Columbia’s most celebrated restaurants, including Sooke Harbour House, The Aerie Resort, Zambri’s, Culinary Capers Catering, UVA Wine & Cocktail Bar and Café Medina. Chovancek has cooked in China, Mexico, Italy, United States and Canada and consults on culinary programming, classes and menu development throughout North America. In addition to being an in-demand chef, consultant and keynote speaker, Jonathan is the co-founder and operations manager of Canada’s Bittered Sling Bitters, a retail line of high-quality cocktail and culinary bitters.

Edible Canada (formerly Edible British Columbia) is a six year-old business headquartered at Granville Island Public Market, in Vancouver, British Columbia. About Eric Pateman, President & Founder

Eric-@-Market-DinnerEdible British Columbia was created by Eric Pateman in the spring of 2005. Eric is a Vancouver native with a lifelong passion for food and wine. He has worked in the hospitality industry for over 15 years both as a chef and hotel consultant and has rated restaurants for the Mobil Travel Guide. Eric’s own culinary travels have taken him throughout North America, to the UK and to Africa where he has sought out unique food experiences. Edible British Columbia is the product of Eric’s fervor for great food and wine, his extensive knowledge of the hospitality industry and an enthusiasm for exceeding expectations when it comes to customer service. Eric is a past board member of the BC Culinary Tourism Society and the Vancouver Coast & Mountains Tourism Region. Eric is also a member of the Chef’s Table Society, Big Brothers of Greater Vancouver and supports many local charities including the Vancouver Food Bank and Les Dames D’Escoffier. Eric was named as one of Business in Vancouver’s Top 40 Under 40 Business People in 2007, and to Western Living Magazine’s list of the Top 40 Foodies Under 40 in Western Canada in 2008.
