Meet the ‘Malibu’ — One of the More Interesting Cocktails Being Made in Gastown Right Now

Don’t be fooled by this drink’s pinkish hue. The Malibu cocktail is not to be trifled with and is a much closer relative to the martini than the Cosmopolitan. An no, it doesn’t contain any Malibu-brand liqueur. Coconut-washed gin, French vermouth, strawberry, dill and a hint of salted Aperol make for a smooth sipper with a rich mouthfeel and light finish. The dill and salted aperitif add savoury, herbaceous notes just to keep it interesting! Find it at The Diamond.
