You Need to Try the Pancetta-Wrapped Salmon with Corn Succotash at The Mackenzie Room

This was the best dish I’d enjoyed in a while. The fork-tender sous vide spring salmon was wrapped in house-cured Berkshire pancetta, which lent a seasoned, porky edge to every single bite. It was set next to a punchy succotash bright with poblano pepper, corn, Walla Walla onion, basil, cilantro and lime. This had been carefully spooned into leaves of gem lettuce, so the thing was dense with intense flavour and given a good base of crunch. Decorating the plate was an underpinning of corn bisque amplified by brandy and impactful dots of of sungold tomato vinaigrette. The whole thing paired exceptionally well with the 2016 Hatch “Rhymes With”, an orange blend of kerner, schönburger and chardonnay. You need to try this while it’s still on the menu!
