As a storied address in the heart of Whistler’s Village, Il Caminetto has been reimagined by the acclaimed New York-based Rockwell Group into a vibrant, contemporary 160 seat dining room. An understated, nature-inspired interior design speaks to the beauty of the spectacular landscape and plays to the authenticity of the location. The regionally focused menu will meld Italian and local flavours to showcase the best of nearby farms and waters.

JOB SUMMARY:
The Executive Chef is directly responsible for creating and developing all food menus, and management of all aspects of food service and the kitchen. This hands-on leader in the kitchen has a sophisticated, trained palate and is in tune with current trends, in turn inspiring and driving the culinary team to create and deliver a great culinary experience for customers.

ESSENTIAL DUTIES AND RESPONSIBILITIES:
(other duties may be assigned as required)

– Creating innovative and inspirational menus that feature signature dishes
– Accountable for recipe creation and costing, food ordering, food production, storage, and sanitation
– Strives for creativity and quality in presentation
– Maximizes the productivity of culinary staff, through effective supervision, leadership, management and coaching
– Oversees the day to day control of labour and food cost
– Develops rapport with customers; proactively identifies problem areas and formulates solutions
– Develops strategies and action plans to achieve set goals and objectives
– Proactively monitors performance of the restaurant against approved budget; makes appropriate recommendations as necessary
– Facilitates exceptional customer service
– Understands customers, builds organizational credibility and develops new revenue sources
– Sets goals and standards while finding solutions that are beneficial to customers, while meeting deadlines that are decisive and achievement oriented

REQUIRED EXPERIENCE AND QUALIFICATIONS:

– Minimum 5 years’ experience at an Executive Chef level with a focus at a premium level of Italian cuisine
– Equivalent Red Seal certification, a degree in the Culinary Arts or an equivalent combination of education and experience. Training in Italy is an asset.
– Must have at least 8-10 years of experience in authentic regional Italian cuisine with upscale fine dining premium Italian restaurants, including multiple opening experience
– A deep understanding of Italian food history, tradition and culture
– Seasonal menu development for a fine dining environment
– Impeccable culinary skills
– An inspiring leader who has proven skills rallying a team to achieve its highest potential, and then driving it to the next level
– Extensive creative and innovative menu development and budget preparation experience
– Highly committed to a premium level of quality
– Skilled at developing and creating dining experiences that promote outstanding customer satisfaction and loyalty
– Strong record of streamlining operations and improving service while preserving the highest levels of quality
– Exceptional creative abilities
– Strong verbal and written English communication skills, with the ability to read and interpret documents, write reports and to speak effectively to customers and employees
– Comfortable with dealing with the media, public speaking, and demonstrating culinary techniques
– Social media savvy
– Responsive to approving negative guest commentary from third party review websites (TripAdvisor, Yelp, Google, etc.)
– Engaged personality that excels in the limelight
– A passion for collaborative chef engagements and guest chef appearances
– Excellent professional presentation
– Displays a positive attitude, maintains enthusiasm and celebrates success
– Computer literate in systems related to the operation
– Ability to meet the physical demands of the job (mobility, standing, walking, lifting for the majority of the day)
– It is essential to have the flexibility to work evenings, weekends and holidays
