by Joey Armstrong | I first got my hands on Lita’s wheat tortillas at the Hastings Park Winter Market a couple months ago and I haven’t been able to shut up about them since. For a quick, easy and perfectly delicious summer meal, fill them with refried beans, avocado, crunchy local radishes and chipotle mayo. Or get fancy with some grilled prawns, mango, salse verde and cilantro. They take less than a minute to cook, so have fun with them, and maybe pair up with some Park Life passion fruit ale from Bomber Brewing.
The only downside to these beauties is their availability. As far as I can make out, they can only be found at the Mount Pleasant Farmer’s Market, and the dates are pretty random (June 12 & 26, July 10 & 24, August 7 & 21, September 18, October 2). If anyone knows of alternative source, I’m all ears. In the meantime, one of my (obviously very important) summer plans is to visit the market on the dates above and hoard as many tortillas as I can in the freezer.
