A Tour Inside The Highly Anticipated ‘Nightingale’ Before Tonight’s Opening Service

Nightingale is open. The highly anticipated new 166 seat restaurant from David Hawksworth launched at 1017 West Hastings Street this evening. We were able to sneak in just a few minutes before the first customers arrived to take a few photographs. After much anticipation, Nightingale – the newest addition to the Hawksworth Restaurant Group’s flock – welcomes guests starting tonight, Monday May 9. Located at 1017 West Hastings, the two-level, 180-seat room, which was designed by multi-award winning Canadian design firm Studio Munge, will finally be unveiled tonight.

Guests walk through an unassuming entrance to be greeted by the restaurant’s high ceilings and modern paper taxidermy for a dramatic first impression. The juxtaposition of the light birch walls paired with the masculine details of the furnishing gives the room a cozy yet contemporary feel.

“Echoing the original Hawksworth Restaurant’s approach, Nightingale will place an emphasis on BC’s seasonal produce and showcase our take on the region’s incredible variety of fresh flavours,” says Chef David Hawksworth. “Nightingale brings to the table simple seasonal dishes, packed with flavour, and a focus on quality, excellence and fun.”

Nightingale’s thoughtfully planned menu is sectioned into raw, vegetables, pizza, small and large dishes; all perfect for sharing. Fresh, local ingredients are abundant throughout the menu and highlights include: daily market fish crudo, charred carrots, roasted mushroom pizza, burrata and anchovy toast, and grilled pork belly.

Try Nightingale’s signature beer, Nighting-Ale; a craft beer that was developed with the help of local brewer, Main Street Brewing Company. Award winning sommelier, Bryant Mao, has curated a social, upbeat and unique wine selection that perfectly accompanies Nightingale’s unpretentious atmosphere. A vast selection of bottles in the cellar are available by the glass, or by the half bottle allowing diners to experience a wide range of tastes that perfectly accompany each dish.

A prominent bar sits to the right of the entrance, acting as an anchor point for the lounge, and grounding the entire space with an approachable and lively atmosphere.
