Never to be overlooked on the menu at Chambar is its short list of “accompaniments”. Among them are the restaurant’s unique Roquefort cheese and green peppercorn jus poutine and house bread rolls served with bright paprika butter. Both have long been highly prized by regulars, but until our most recent supper we’d never noticed the croquettes. There are six of the bite-sized beauties per order. Once the lot are arranged on the plate, they’re drizzled with a gentle, chili-licked aioli and garnished with sprigs of fried parsley. Their outer crusts are fried a golden brown, with the crunch giving way to hot, soft, smoky, dreamy innards of whipped potato and applewood-smoked cheddar. They disintegrate on the palate without much effort, and make fine fast friends with beer.
