Vancouver, BC | Shaughnessy Restaurant, with its spectacular 55-acre garden vistas, has been gearing up for the fall season with some exciting news. We are pleased to announce the hiring of General Manager Toni Hulsch as well as Executive Chef Sean Sloan and his kitchen brigade. Under their guidance, Shaughnessy Restaurant looks forward to moving in a fresh direction that is sure to delight your taste buds.

Sean Sloan, a Montreal born and West Coast trained chef with over 6 years experience with the Sequoia Group, has created a fall menu focused on elevating modern classics by sourcing produce and protein from small, local, and quality suppliers. On Monday September 21st, the fall menu launches.

Brunch will continue to focus on West Coast comfort classics. Popular dishes include a crab and shrimp croissant, a grilled vegetable hash with two free range poached eggs and rich hollandaise, or a steelhead salmon burger served with a house-made tartar aioli. Lunch will have even more choices ranging from salads, small plates, soups, sandwiches, and pasta. One of the kitchen’s favorite is the Spaghetti Bolognese, just like grandma used to make. The menus (lunch, brunch, and dinner) cater to everyone – including kids. Dinner has also taken a cue from fall with a menu defined as “luxury comfort cuisine.”

Start the night off with charcuterie, which includes a selection of cheeses and cured meats, house smoked olives, hummus and herbed crisps. Another highlight is the scallop, bacon, and endive salad, dressed in maple vinaigrette. Mouth-watering mains include an assortment of tender cuts from the grill, pasta dishes including a butternut squash and mushroom risotto with truffle, or brick chicken, tender off the bone with a warm potato salad. The menu reflects the changing colours of autumn leaves, the chill in the air, and the brilliant, warm flavours of the season.

In addition, Shaughnessy Restaurant has also launched their own version of Happy Hour happening seven days a week between 3 and 5 pm. We teamed up with several renowned interior designers including Wade King, to create an airy yet intimate ambiance and décor. The slate and wood floor is reclaimed from a 1910 Vancouver warehouse which adds old-world charm and warmth. Intimate booths line the back walls with a beautiful Rhododendron painting taking presence above. French doors provide the opportunity for a private group dining room while still maintaining the bright openness of the restaurant.
