The GOODS from Wildebeest

Vancouver, BC | Gastown’s Wildebeest restaurant is thrilled to announce its participation in a trio of one-of-a-kind collaborative dinners this Spring. On three separate evenings, Wildebeest teams up with The Black Hoof (Toronto), Shelter (Tofino) and Ava Gene’s (Portland), for what are expected to be highly anticipated dinners.

On Tuesday, April 28, Wildebeest joins forces with Toronto’s The Black Hoof. The Black Hoof’s protein-forward dishes are crafted by Executive Chef Jesse Grasso, revered for his nose-to-tail cooking. Locals might remember Chef Grasso from his time at The Flying Tiger, Abigail’s Party, Bao Bei, and La Quercia. Joining him from The Black Hoof will be Vancouver’s own David Greig (Head Bartender) and Jake Skakun (Sommelier), both well known and loved from their time at l’Abattoir. The Black Hoof owner, Jen Agg, will also be stepping behind the bar with Wildebeest’s Josh Pape for the evening. Tickets are $135, and include complimentary two-day passes to the EAT! Vancouver annual foodie festival. Purchase your ticket here.

Next, Saturday, May 9th sees Wildebeest returning to Chef Matty Kane’s kitchen at Tofino’s Shelter. This is the second such dinner after a wildly successful collaboration dinner last summer. The popular Vancouver Island restaurant, lauded for its foraged produce and fresh, seafood-focused, shares Wildebeest’s dedication to ethically raised proteins and local ingredients. Reservations can be made by calling Shelter at 250-725-3353.

On June 9th, Wildebeest migrates to the USA for a collaborative dinner of epic proportions at Portland’s Ava Gene’s. Number five on Bon Appetit’s list of Best New Restaurants in 2013, Ava Gene’s shines with Chef Joshua McFadden’s simple, honest fare. Can’t make the six-hour drive down the coast? The folks of Ava Gene’s will bring their culinary know-how to Wildebeest on Tuesday, June 16 for a second collaborative dinner. Hosted by Visa Infinite, the night is certain to serve up the best both restaurants have to offer. For additional information, visit www.visainfinite.ca.

About Wildebeest

Wildebeest invites you to experience unabashedly adventurous, yet simple cooking at its finest set against the history of the Vancouver neighbourhood of Gastown. Explore whole-animal cookery paired with a diverse selection of Old and New World wines and a carefully crafted cocktail list. Set in a refurbished 19th century building, the multi-level space offers a front house cocktail bar & lounge, open-concept kitchen complete with large kitchen tables, an inviting dining room with banquette seating, and an intimately-set underground wine bar.

The gastronomically daring menu focuses on whole-animal cookery prepared with the utmost integrity. Each and every component has been thoughtfully nurtured by the restaurant’s executive chef, Wesley Young, from field to finish.  Working closely with surrounding farms and farmers to raise animals and grow custom produce, the team at Wildebeest has crafted a menu unlike anything yet explored in Vancouver.
